A simple recipe for gingerbread crinkle cookies

You might be wondering, do I need another cookie recipe? This simple recipe for a gingerbread crinkle cookie makes a delicious, make-ahead holiday dessert that everyone will love. Especially the host, due to the make-ahead part! I want everything to be special during the holidays, but I need to be reasonable too! Having friends for lunch, afternoon tea, or dinner can be stressful. Having a yummy dessert that can be made a few days ahead makes all the difference.

What’s ingredients will you need to make gingerbread crinkle cookies?
- Flour
- Dark brown sugar
- Molasses
- Spices (ginger, cinnamon, clove)
- Baking soda and salt
- Butter
- Whole milk
- Sugar and powdered sugar to roll cookie dough


What makes this cookie so special?
The intense flavors of spices like ginger, clove, and cinnamon make for a cookie with a lot of flavors but not too sweet.
I love gingerbread cookies and cakes of all kinds. I’ve made gingerbread Madeleine’s, healthy gingerbread muffins, and these molasses cookies.
Where does the name “crinkle cookie” come from?


The cookies are made by rolling the dough ball in sugar and then powdered sugar. The crackle or crinkle happens in the baking when they start to puff and spread. The darker the cookie, like chocolate or gingerbread, the more dramatic the crackle appears.
I made lemon crinkle cookies, and they were delicious, but the “crackle” is more subtle.
What’s the best way to serve gingerbread crinkle cookies?

I make very large cookies. This recipe makes exactly 12 large cookies. I prefer a large cookie when it’s dessert. One cookie with a small scoop of gelato or ice cream is perfect!

Ingredients
- 3 cups all-purpose flour
- 3/4 cup dark brown sugar
- 3/4 cup dark molasses
- One tablespoon of ground cinnamon
- One tablespoon of ground ginger
- 1/2 teaspoon ground clove
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 12 tablespoons butter, cut into cubes
- 2 tablespoons whole milk
Instructions
- Add the flour, dark brown sugar, spices, salt, and baking soda, and whisk together until combined.
- Add the molasses and mix until combined, then add the cubed butter at room temperature for about 20 minutes and mix with a stand or hand mixer until completely incorporated.
- Add the milk and mix again.
- Divide the dough into two balls and freeze for 20 minutes.
- Make balls quickly, rolling in granulated sugar first, then powdered sugar.
- Place on parchment-lined cookie sheets at bake for 10-11 minutes. Do not overbake. Allow to cool on the baking sheet for a minute or two, and then move to a cooling rack.
2. Dessert Plates

I have always loved mixing it up with fun plates for dessert, bread and butter or just about anything. It’s the first thing I look for when I go thrifting. It’s amazing how often I will find a stack of small plates in a fun pattern.
If you can’t find vintage, Anthropologie always has fun options. The ones I’m showing today with the cookies are from several years ago after Christmas. A great time to buy! I think Mary Ann needs a stack of these after living right above this iconic San Francisco landmark for eight years.
3. Mushroom Sculptures
I love these gorgeous wood carved mushrooms from Beck & Cap. They make a lot of beautiful things, but these mushroom sculptures….I just can’t stop thinking about them. They would make a great gift!
4. Cut Crystal Votives from Walmart

Okay, these are actually shot glasses that I found at Walmart in the kitchen department. They come in a set of 6 for around $6. They are quite lovely lined up on a table on their own or with the Scandinavian Inspired Trees we made last year.
