Ever since I first started making my own protein bites, I can’t possibly buy them. Although yesterday, my friend Diane stopped by with a little cup of the most delicious Chocolate Macaroon Bites from Myx Creative Kitchen in Greenwich, CT. We knew we had to figure out how to make them. I think these are pretty close and I added Primal Kitchen Chocolate Coconut Collagen Fuel and a drop of Peppermint Essential Oil.

I love making my own protein bites rather than eating a store bought and there are so many options…These are a copy cat of a Chocolate Macaroon Bite from a restaurant called Mix in Greenwich, CT
- Prep Time: 5 minutes
- Cook Time: none
- Total Time: 10 minutes
- Yield: 24 1x
Ingredients
- 1/3 cup dark chocolate cocoa powder
- 3/4–1 cup maple almond butter
- 1/4 cup Primal Kitchen Chocolate Coconut Collagen Powder
- 3 tablespoons maple syrup
- 1/3 cup unsweetened coconut (plus a little extra for rolling balls in later)
- 1/3 cup coconut flour
- 1 Tablespoon almond milk
Instructions
- Mix everything together and combine with a rubber spatula
- Or, it can be mixed in the bowl of food processor fitted with the blade attachment. Pulse until everything combines in the bowl.
- Using a small cookie scoop. shape dough into balls.
- Place in mini cupcake liners and store in refrigerator
Notes
Toast a little extra shredded coconut in a 300º oven for no more than a minute and roll balls in toasted coconut (optional).

My Favorite Wide Leg Pants
I was a slow adapter to the wide leg pants…which is strange, because I’m tall. Madewell has the perfect wide-leg pant. The Slimm Emmet Wide-Leg Crop pant and it comes in petite, regular and tall. They are not too wide, but you’ll instantly feel a little more current with the trends.

When I visited Mary Ann Classic Casual Home in San Francisco last week I loved her Bubble-Up dish soap dispenser. It’s a little dish with a brush that stores the soap, so when you need it, it’s right there! It’s made with renewable bamboo and recycled plastic. She insisted I get one…so I did.

The new Turnbridge side table from Serena & Lily is so charming. It’s made of rattan, but still a little modern, in a softer way. It would work in almost any situation and that’s when you know you have a great table. You could use it beside a chair, between a pair of chairs, as a bedside table…in any room.

Vince Sneakers
It’s just about time to put away my favorite gray wool Vince sneaker and maybe replace them with a pair of these for the summer. These are the most comfortable casual sneaker I’ve ever worn. Madeline and I both have a pair. They last forever and all they need to look like new every so often is a good scrub with a Magic Eraser around the sole of the shoe.
My favorite oil this week
By now you know how obsessed I am with essential oils, I use them everyday and can’t imagine a day without them. My favorite oil this week is peppermint. I use the Peppermint Vitality Oil in my favorite smoothie, in our diffusers and sometimes during the day, I’ll just put a drop in the palm of my hand, rub together and then breathe deeply to clear my head. I instantly feel invigorated. It’s great while working on a difficult task, while driving lost distances…really anytime you need a burst of energy.
