Chai Spiced Overnight Oats With Mini Chocolate Chips

Did you know that today is National Chocolate Chip Day? I’m joining a few friends to share our favorite chocolate chip recipe. I decided to make chai-spiced overnight oats with mini chocolate chips. My first thought was to make chai spice cookies with chocolate chips, but then I decided on overnight oats. We’ve been using protein oats, so this recipe is great for breakfast.
Are overnight oats healthy?

Using high-quality ingredients, overnight oats can be a nutritious breakfast option. I like to use Bob’s Red Mill protein oats. They are a little more expensive than old-fashioned rolled oats but have almost double the amount of protein.
Here are just a few of the benefits of eating overnight oats:
- They are a good source of protein
- They are high in fiber, which helps you feel full and satisfied
- They are a good source of vitamins, minerals, and antioxidant,s depending on what kind of combination of nuts, seeds, and fruit you add.
Be sure to limit the number of ingredients with added sugars as that can negate the health benefits of the good ingredients.
Why add chia seeds to overnight oats?
According to Harvard Health Publishing, chia seeds are nutritional heavyweights. They contain a variety of nutrients including fiber, protein, omega-3 fatty acids, antioxidants, and various vitamins and minerals including calcium, magnesium, and phosphorus, all of which are beneficial to your health.
Ingredients for chai chai-spiced overnight oats recipe with chocolate chips

- Chai spice mix (nutmeg, coriander, clove, ginger, cinnamon)
- Protein oats/old-fashioned rolled oats (quick oats or steel-cut oats won’t work here because quick oats will be too mushy and steel-cut oats will be too firm and have a much chewier texture)
- Almond milk
- Chia seeds
- Maple syrup
- Mini chocolate chips (or any of your favorite toppings)
Ingredients for chai spice mixture

- Nutmeg
- Cardamom
- Clove
- Ginger
- Cinnamon
Optional ingredients: I don’t add additional items, but you could include some Greek yogurt, almond butter, protein powder, soy milk, cashew milk, coconut milk, or your milk of choice.
Note: This recipe is for one serving but I typically make a big batch (six at a time) so that I have them in the refrigerator for those busy mornings. It’s the perfect way to start a day.
How to make chai spiced overnight oats






- Place six containers on the countertop. I use repurposed 13-oz jars, but a Mason jar works well, too. Just use whatever containers you have.
- To each jar, add the oats and chai spice and shake.
- Next, add the chia seeds, maple syrup, and almond milk and stir to make sure all ingredients are well combined.
- Screw on the lids of each jar and place them in the refrigerator for at least four hours, preferably overnight.
- When ready to eat, remove the lid, sprinkle some mini chocolate chips on top, and enjoy!



Note: If the texture of the oats seems too dry after refrigerating, just add additional milk and stir until combined.

Ingredients
For the chai spice mixture:
- 1 tsp. nutmeg
- 1 tbs. ground cardamom
- 1/4 tsp. ground clove
- 2 tsp. ground ginger
- 2 tbs. ground cinnamon
For the overnight oats:
- 1/2 teaspoon of chai spice
- 3/4 cup protein oats
- 3/4 cup unsweetened almond milk
- 1 tablespoon of chia seeds
- 1/2 teaspoon maple syrup
- Mini chocolate chips for garnishing
Instructions
- Place six containers on the countertop. I use repurposed 13 oz. Bonne Maman glass jars. A Mason jar works well too. Just use whatever containers you have.
- To each jar, add the oats and chai spice and shake.
- Next, add the chia seeds, maple syrup, and almond milk and stir to make sure all ingredients are well combined.
- Screw on the lid to each jar and place them in the refrigerator for at least four hours but preferably overnight.
- When ready to eat, remove the lid, sprinkle some mini chocolate chips on top, and enjoy!
