We celebrated Patrick’s birthday, and when I asked him what kind of cake he wanted…he said he would rather have chocolate chip cookies. So this large cookie made in a Lodge cast iron skillet was the perfect solution.
A cake (or a cookie) has to be round when served for a special occasion. Of course, this is a personal opinion, but I rarely veer away from it. I grew up in the 1970s, so a round Bundt cake was often the cake served. Round cakes, whether layer cakes, Bundt cakes, or skillet chocolate chip cookies, all have one thing in common. And that is that they can be served on a pedestal cake plate. And that’s important when it comes to birthdays!
What makes chocolate chip cookies chewy rather than crispy?
The science of cooking isn’t really my thing, but I do like chewy cookies. So here’s my simple explanation: By creaming cold butter with sugar, you create small air pockets that remain in the dough as it bakes. Cold butter also takes longer to melt when it’s in the oven, making cookies more moist and chewy rather than flat and crispy.
Why use a cast-iron skillet?
I like using a Lodge cast iron skillet for this cookie recipe for several reasons. First, if you keep your skillet seasoned properly after each use, there is no pan prepping. You don’t need cookie sheets or the time to scoop and make uniform cookie dough balls. The edges of the cookies are crisp and chewy, and the center of the cookie is soft and fluffy. You can also serve it right from the skillet, or easily remove to a pedestal cake plate.
What if I don’t have a cast iron skillet?
Martha says you can use a non-stick oven-safe skillet if you don’t have a cast iron skillet. However, she also notes that you may not get the crispy edges.
What’s the best way to store the leftover cookies?
If you have any leftover cookie wedges, wrap them in plastic or an airtight container and store them at room temperature for a few days.
Minimal equipment needed for making cast iron skillet cookies
All you need is:
- Wooden spoon
- Mixing bowl (No need to get out the stand mixer)
- 10-inch skillet (preferably a Lodge cast iron)
Simple ingredients for a chocolate chip skillet cookie recipe
Dry ingredients
- Semisweet chocolate chips or chocolate chunks if you prefer
- All-purpose flour
- Dark brown sugar
- Granulated sugar
- Baking soda
- Coarse salt
Wet ingredients
- Vanilla extract
- Egg
- Unsalted butter, room temperature
Directions for making a next-level giant skillet cookie
- Preheat the oven to 350º.
- In a large bowl, cream the butter and sugars with a wooden spoon until combined.
- Add the egg and vanilla and mix well.
- Next, stir in the flour, baking soda, and salt.
- Stir in the semi-sweet chocolate chips.
- Spread the cookie dough evenly in a 10-inch cast iron skillet and smooth the top and the edges.
- Put the cast iron skillet in the center of the oven and bake the cookie until golden brown, about 18 to 20 minutes or a bit longer if needed.
- Remove from the oven, let it cool for a few minutes, and immediately serve your giant warm cookie.
Note: If the edges start to get too brown while baking, place some foil around the edges while the rest of the cookie turns golden brown.

- 1/3 cup dark brown sugar
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon coarse salt
- 1 teaspoon pure vanilla extract
- 1 large egg
- 6 tablespoons unsalted butter, room temperature
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, cream the butter and sugars with a wooden spoon until combined.
- Add the egg and vanilla and mix well.
- Next, stir in the flour, baking soda, and salt.
- Stir in the semi-sweet chocolate chips.
- Spread the cookie dough evenly in a 10-inch cast iron skillet and smooth the top and around the edges.
- Put the cast iron skillet in the center of the oven and bake cookie until golden brown, about 18 to 20 minutes or a bit longer if needed.
- Remove from the oven, let it cool for a few minutes, and serve your giant warm cookie immediately.
Notes
If the edges start to get too brown while baking, place some foil around the edges while the rest of the cookie turns golden brown.
If you prefer individual cookies, try making mini skillet cookies with these mini cast iron skillets. Serve them in the skillets with a scoop of vanilla ice cream and Hershey’s chocolate syrup.

I wore it to the Terrain opening at The Brooklyn Botanic Gardens this week. I wore it with black oxfords, knowing I would be walking a lot, but it would be great with sandals too! A dress that’s perfect year-round and can be dressed up or down!

Now he and my new son in law go skillet hunting at flea markets nearby most weekdays, so he can build up his cooking equipment.
