Cottage Cheese Egg Bites with Gruyère and Bacon

These egg bites are delicious and perfect for making a big batch and storing them in the refrigerator. We have been so busy with the book, the wedding, and the move that having a nutritious, easy breakfast or lunch that just needs to be heated up has been so helpful.
The recipe includes a tip that makes these egg bites more like mini soufflés; be sure to add that pan of water for best results!
If you like the idea of meal prep, then definitely try this one! They are packed with protein and easy to take on the go, too! The recipe is at the bottom of this post!

Outfit of the Week

Blazers (left): Argent // Sézane // Tuckenuck // Veronica Beard // Boden // Aritzia // Outfit (right): Houdstooth blazer // Wool scarf // Boxy tee // Red lipstick // Jeans // Suede bag // Loafers // Trouser socks
It’s blazer season, and in the fall I always reach for a houndstooth blazer. It goes with everything: denim, white jeans, all black, and can be dressed up or down, depending on what you pair it with. Mine is a few years old, and it’s from J.McLaughlin. I’ve found several gorgeous blazers that would be just as versatile. I really like the houndstooth jacket from Sézane, and it’s priced at $245.
I’m wearing my three-year-old blazer with jeans from Alex Mill, a white boxy tee from Old Navy that I just bought more of, a wool scarf from Sézane, trouser socks, and of course my favorite Gucci loafers, plus a new brown suede bag from Quince. Except for the new bag, I wear these on repeat. And I have a feeling the brown suede bag will make it into the rotation too!
Two Instagram accounts I’m following that I really enjoy, and I think you will too!
Shand Design – @shanddesign
If you’re not already following @Shanddesign on Instagram, you’re in for a treat. This mother-daughter design team has a series I look forward to every time it pops up in my feed: three finds that look far more expensive than they are. Some are $30 or $50, some are closer to $400, but every one of them looks like it came from a high-end shop at a fraction of the price. Their eye is impeccable, and I’ve added more than a few of their picks to my own wish list. If you love a good find as much as I do, go give them a follow. You can thank me later!
Tremont Home @tremont_home
Delaney Lundquist of @tremont_home is one of my favorite new finds. She’s building her home’s style piece by piece with vintage, secondhand treasures, and DIY projects, and she shares the whole process along the way. She also has a generous habit of telling you exactly where she finds things, like the best places on Etsy for vintage art. Her Substack, Tremont Home, is full of weekly roundups of one-of-a-kind vintage finds from around the internet, and it has become one of my must-reads. If you love the thrill of the hunt, you’ll love her.

Cottage Cheese Egg Bites with Gruyère and Bacon (High Protein!)
We blend cottage cheese, eggs, and nutty Gruyère, stir in crispy bacon, and bake them in a gentle water bath for that café-style texture at home. Make a batch on S,unday and breakfast is done all week.
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 16 egg bites 1x
- Category: Breakfast
- Method: Baking
- Cuisine: American
Ingredients
- 10 large eggs
- 1 16 ounce container of cottage cheese (a little more than 1 1/2 cups)
- 3 ounces Gruyère cheese, grated
- 1 tablespoon corn starch
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon ground pepper
- 5 strips cooked bacon
- Fresh chives for garnish
Instructions
- Preheat the oven to 325ºF and grease two muffin tins with cooking spray.
- Fill a 9-by-13-inch baking pan about halfway full with very hot water and place it on the bottom rack of the oven.
- In a blender or food processor, add the eggs, cottage cheese, Gruyère cheese, cornstarch, salt, and pepper, and blend until smooth. Transfer the mixture to a 4-cup measuring cup for pouring into the molds.
- Pour the egg and cheese mixture into the muffin wells filling them about 3/4 full.
- Add the bacon on top and, using a skewer, chopsticks, or the tines of a fork, stir the bacon into the egg mixture.
- Place the muffin tins in the oven and bake for about 20 minutes. They’re done when the egg tops are no longer wet and the edges begin to pull away from the sides.
- Use a regular dinner knife to run around the edges of each bite so that they easily release. Sprinkle some chives on top of each egg bite and serve warm.
- Place the leftover egg bites in an airtight container and store them in the refrigerator for a few days. When serving, reheat them in the microwave.

Love the jean and blazer look. I’m going to copy you. And I pinned the egg bite recipe to make today.
