A Delicious Peach Crumble

Is it crumble or crisp? I never know. But it’s peach season, and I am adding peaches to salads, yogurt, oatmeal, and I’m baking everything with peaches! This peach crumble (or crisp) makes only four, because you will want to eat it right away!

We order a big box of peaches every year from The Peach Truck, and if you’ve never had them, I recommend you order a box before they sell out for the season! I promise, you won’t regret it!

You can double or even triple the recipe as needed. I’m using my Staub cocottes, which are the perfect size, but a larger ramekin would work too!

The Nordstrom Anniversary Sale has me thinking about fall clothing, but of course there is still plenty of hot summer weather, which makes me realize sweater weather is a way off. I’ve mentioned the Maeve Collete pants from Anthropologie before, and I am thinking of ordering a pair in fall colors since I wear these on repeat. The short-sleeve shirt from Madewell is on sale, and the Aritzia x Sperry Boat Shoes are on sale too! They come in several colors and are so comfortable.

Brightland Olive Oil

By now, everyone has heard of Brightland Olive Oil. It’s available online and in shops like Big Night. They have a new special release called The Mediterranean Duo. For an extra $10, you can order a pour spout that delivers the perfect amount of Castelvetrano or Kalamata olive oil with each pour.

I recently used Castelvetrano olive oil on a checkerboard cheese plate and a peach-and-tomato salad plate. It really elevated both simple dishes. These would make a great hostess gift for anyone who loves to cook or eat!

These are the items that you loved from the Nordstrom Anniversary Sale! The one item that surprised me was the black mango wood lazy susan. It caught my eye, but I didn’t end up buying it since we are moving. I imagine using it next to my stove with olive oils, vinegars, salt, etc.

The Mary Jane flats from Mansur Gavriel are so comfortable right out of the box. They will be perfect with my new pleated tote from Mansur Gavriel. The red lining is such a fun surprise. The tote is large enough to carry my lap top too! Perfect for trips into the city on the train.

I bought three Longchamp leather cosmetic cases. I think they will be great stocking stuffers for the girls.

A Delicious Peach Crumble

This recipe makes only 4 servings, but it can be doubled or even tripled.

Ingredients

Scale

Peach Filling

  • 4 peaches, unpeeled, medium diced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon granulated sugar
  • Pinch salt
  • Juice of one small lemon
  • 1/2 teaspoon vanilla extract

Oat Topping

  • 6 tablespoons rolled oats 
  • 1/4 cup all-purpose flour 
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch salt
  • 3 tablespoons cold unsalted butter, cubed 

Instructions

  1. Toss the peach filling ingredients together in a bowl; divide among 4 Staub cocottes.
  2. Combine the topping’s dry ingredients, then cut in the cold butter with your fingers until it looks like coarse crumbs.
  3. Scatter the topping over the peaches.
  4. Bake at 350°F for about 40 minutes, until golden and bubbling.
  5. Rest 10 minutes before serving with vanilla ice cream.
