We always have a lot of leftovers, and rather than go with the usual turkey sandwiches, try a new creative twist this year. Make leftover turkey tartines. They are delicious, easy to make, and come together quickly; the only extra ingredients you’ll need are bread slices, bacon, and cheese.

How long is leftover turkey good in the fridge?
According to the USDA, cooked turkey is fine for 3 to 4 days, kept in a refrigerator at 40 degrees or less. They also say that turkey can be frozen for 3 to 4 months. Although safe indefinitely, frozen turkey tends to lose moisture and flavor over time, so they recommend using frozen turkey within 3 to 4 months.
What is the best way to store leftover turkey?
You should store leftover turkey within two hours after cooking. Simply divide the leftovers into small portions and refrigerate or freeze them in smaller, shallow containers. They will cool more quickly this way, and it keeps bacteria from having the chance to multiply.
How can I reheat turkey leftovers and keep it moist?
The best way to reheat turkey is in the oven. Set the oven to 300º, and place the carved meat in a shallow baking dish. Add some chicken broth or turkey stock to the pan and cover with foil. It takes about 25-30 minutes to heat.
The equipment you’ll need for making leftover Thanksgiving turkey tartines
- Panini maker, skillet, or frying pan
- Oven (broiler setting)
- Sheet pan
- Cheese grater
- Cutting board
The ingredients
- Slices of French country bread (sourdough also works well)
- Butter
- Gruyère cheese
- Leftover turkey
- Leftover cranberry sauce/relish
- Bacon
How to make leftover Thanksgiving turkey tartines
- Heat a medium skillet over high heat, reduce to medium heat, and cook the bacon, then break it into bite-sized pieces and place it in a bowl.
- Using a fork, shred the turkey.
- Butter the bread slices and toast them until golden brown.
- Grate the cheese and sprinkle it over the toasted bread.
- Place the bread slices with the cheese on top and bake under the broiler just until the cheese has melted.
- Spread about a tablespoon or two of cranberry sauce on top of the melted cheese.
- Place the shredded turkey on top of the cranberry sauce. Add salt and black pepper to taste.
- Place a few lettuce leaves on top of the turkey.
- Top with a few pieces of bacon.
- If desired, drizzle with a little bit of olive oil.
- Serve immediately and enjoy!
