Protein Bites are the perfect pre or post workout snack or for travel days
3 Recipes for the best No Bake Protein Bites! This week I stopped by Trader Joes’s on the way to a workout class. I happened to see a little bag of protein bites at the check out and since I was hungry…I thought why not? I love Trader Joe’s, but after the home made protein bites I’ve been making…these were not even edible. So I made more protein bites and after looking at tons of recipes, I sort of mixed a combination of what I had on hand. I change up using vanilla, chocolate and vanilla chai protein powders and sometimes use honey or agave for a little sweetness. I also switch out nut butters and almond meal over oats. There are so many combinations that work. You may remember these that I made last winter.
No Bake Protein Bites with Toasted Coconut
I love this version of protein bites rolled in a little toasted coconut.
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 12-15 1x
Ingredients
- 1/2 cup creamy peanut butter or almond butter
- 3 Tablespoons honey
- 1/2 teaspoon vanilla
- 1 cup almond meal
- 1/4 cup chocolate collagen powder
- 1/4 cup coconut
Instructions
- Mix all ingredients together in bowl with a rubber spatula or mix in a food processor.
- Make small balls using an ince cream scoop with a quick release.
- Roll in a little toasted coconut
Notes
Toasted coconut is just coconut that has been lightly toasted in the oven for about 2-3 minutes at 350º.

Vanilla Cinnamon Bliss Protein Bites
Here’s another favorite that uses the vanilla protein powder and quite a bit of cinnamon. Someone asked me the other day if this is like eating cooking dough. What? Is that a bad thing? Eating cookie dough…yes, bad…raw eggs. But this is a little bit like that and no side effects. My problem is eating only two or three. That’s why I make mine small…so I can justify eating three! If I’m heading out for the day, I’ll take a couple with me and when I realize I have them when I’m starving…I can’t even tell you how blissfully happy a couple of these make me…and a LaCroix.
My Favorite No bake Protein Bites + Vitality essential oils
These protein bites are rolled in a little vanilla protein powder and cinnamon making them resemble a bite size churro!
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 15-18 1x
Ingredients
- 1/2 cup creamy almond butter
- 3 tablespoons agave nectar
- 1/2 teaspoon vanilla
- 1 cup almond flour
- 1/2 teaspoon cinnamon
- 3 drops cinnamon vitality essential oil
- 1/4 cup vanilla collagen protein powder
Instructions
- Mix everything in a bowl and combine with a spatula
- alternatively, you could mix everything in a food processor.
- Using a cookie scoop with a release, make small balls and roll in a little extra vanilla protein powder mixed with cinnamon.
Notes
These might be my favorite! I do like the smooth texture mixing them in a food processor provides, but it’s not necessary. If you don’t have one, mix by hand and they are still delicious!

You might be thinking, what does this have to do with Essential Oils…well, since I’ve started using essential oils, I pretty much add them to everything…including my no bake protein bites. I’ll add cinnamon or clove or a citrus essential oil, depending on what kind I’m making. I love that essential oils help with digestion.

- 1 cup almond meal
- 1/4 cup chocolate collagen powder

- Mix everything together in a bowl with a rubber spatula or use a food processor.
- Make small balls using an ice cream scoop with a quick release.
Notes
You can use any combination of nut butters, protein powder, sweetner like agave, maple syrup or honey and almond meal or oats. You can add in things like nuts, chocolate chips… If it’s dry, add a little more honey, if it’s too wet, add more almond meal or oats. I love to add in essential oils like cinnamon bark or clove.
