Make simple pizzas on the grill for easy entertaining for those last-minute get-togethers after a paddle! Living by the water means a lot of entertaining, which is fine by us! We love to have friends and family over and we have a few go-to meals for those times when you want to make a good impression but still make it easy so we can all have fun.
Make pizza dough ahead of time if possible
Make pizza dough, divide and store it in the refrigerator all summer long. I always have a reason to use it with my son and his friends around during the summer months so they never go to waste. And for the toppings, that’s easy! Fresh basil from the garden, red sauce, and mozzarella. Another favorite combination that we have on hand is caramelized shallots, gouda, potatoes, and fresh rosemary. We can put together a green salad, open a bottle of something, and the simplest, but yummiest dinner is ready in no time

Make the pizzas on the grill to keep everything outdoors
A little prep makes everything simple and more fun for everyone
Since the pizza dough is done ahead of time, there’s very little that needs to be done in the kitchen, especially if we grill the pizzas. It’s nice because it keeps everyone together. 10 minutes of gathering and prep in the kitchen and then the party can be enjoyed outdoors! And since summer is short, we love that!
Create a lounge area + a separate dining area
This means that people can hang out, have a drink and the dining table is ready when the pizzas are done. As you can see we have a very small backyard, but we created two separate areas or patios. We just added the pea gravel to the dining area and we love it! It feels a little like you are in Italy or France when you hear the crunch of the gravel underfoot. Add in some lanterns with candles, some string lights, and put out some non-toxic bug-off spray for everyone to use, and you have a simple, but magical afternoon and evening. What could be better on a summer night? Easy prep with very little shopping, no mess, and a great meal. Enjoy!
For a casual centerpiece, just fill a jar with fresh herbs from the garden and use linen napkins from Garnet Hill
Potato, Shallot, Gouda & Rosemary Grilled Pizza
This pizza is so earthy and good and tastes like summer with fresh rosemary.
- Prep Time: 20 minutes
- Cook Time: 5 minutes
- Total Time: 25 minutes
Ingredients
1/2 pizza dough recipe
1 cup shredded Gouda or Fontina cheese
4–6 sliced thin Yukon gold small potatoes that have been pan sauteed with olive oil, salt, and pepper. (These can be made ahead of time).
1 sprig of fresh rosemary
flour, cornmeal, and olive oil (flour to roll out the pizza dough. cornmeal to use on the pizza peel and olive oil to brush on the dough when it’s on the grill.
Instructions
Use 1/2 recipe of the pizza dough for a 10″ pizza. Prepare the grill with cooking spray and gently slide the pizza dough onto the grill from the pizza peel. (this is why you need the pizza peel coated with a light layer of cornmeal so that it easily slides onto the grill). Once it starts to crisp up, turn over.
Then brush on a little olive oil, add the gouda cheese in a thin layer, top with the sliced potatoes, the shallots, and then allow it to cook for a few minutes until the cheese melts. (hard to say how long because every grill is different). Add the fresh rosemary and remove it to a pizza peel while you make your next pizza.
You’ll need about 1/4 cup of caramelized shallots,
