Balsamic Strawberries with Creamy Goat Cheese on a Tartine
Let’s make a simple summer tartine. Balsamic strawberries with creamy goat cheese on a tartine is the perfect quick lunch or dinner. Today my friend Kim of Northern California Style is joining me for Tartine Tuesday.
Kim is all about enjoying the seasons and often talks about her dad’s garden. Specifically his heirloom tomatoes! Check out the plums Kim used from her neighbor’s garden in the graphic below!
What I love about this tartine is that it’s best when it’s peak strawberry season. Early June through July is the best time for strawberries in Connecticut. I have yet to grow strawberries in our garden, but maybe next year.

I read that strawberry plants do not have large root systems, so growing plants in one square foot is possible. Next year I plan to add them to my stock tank garden. But for now, I’ll buy them at the local farmer’s market on Saturday mornings.
The Ingredients You Will Need:
- Rustic bread
- strawberries
- Goat cheese with honey
- Mascarpone cheese
- Fresh thyme
- Balsamic glaze
- Sugar
- Butter or olive oil
- Flakey sea salt


How to make the balsamic strawberries
- Core and hull the strawberries (this article from The Kitchn has more than you’ll ever need to know about hulling strawberries, but if you are like me, at some point, you might want to know why you need to hull strawberries).
- Add your strawberries to a small saucepan, add the sugar, and cook on low until the juices release. Add the balsamic glaze and cook until thickened.
Make the Cheese Mixture
I used goat cheese with honey, but you could use plain goat cheese and add a little honey if you prefer. Let it soften at room temperature for a few minutes with the mascarpone, and then mash together with a fork until blended.
You could whip it in a food processor or a blender if you want it to be smooth. It’s really a personal preference for the texture you want.
Substitute for Fresh Strawberries
If you don’t have fresh strawberries, you still want the flavor; use a good jam like Bonne Maman Strawberry Preserves. Bonne Maman is always my jam and lemon curd of choice. Mostly because it’s delicious but also because I love saving the jars.
You could also use peaches, apples, pears, or tomatoes!


Balsamic Strawberries with Creamy Goat Cheese on a Tartine
A simple tartine with balsamic strawberries that’s perfect for a summer lunch.
- Prep Time: 10 minutes
- Cook Time: 15 minutes
- Total Time: 25 minutes
- Yield: 2-3 1x
Ingredients
- 1 pint strawberries
- 1/4 cup white sugar
- 2–3 slices of rustic bread
- Olive oil
- 2-ounces goat cheese with honey
- 2-ounces mascarpone cheese
- Balsamic Glaze
- Fresh Thyme
- Flakey Sea Salt
Instructions
- Wash and hull the strawberries and place the whole strawberries in a saucepan. Add the sugar and cook over low heat until the juices release. Cook for about 15 minutes, stirring often, and be careful not to break up the fruit. Drizzle some balsamic on the strawberries and stir to combine. The amount is based on how you like them. I probably add a couple of tablespoons.
- Add the goat cheese and the mascarpone to a small bowl and mix together with a fork (or alternatively, you could whip them together in a food processor for a velvety texture. I prefer the tartines to be a little more rustic, so the mashing with a fork combine worked perfectly.
- Add a little lemon zest to the cheese.
- Prepare the bread. Add a little olive oil or butter and fry or place on a griddle. Toast both sides.
- Spread with a generous amount of the cheese mixture.
- Spoon the balsamic strawberries on top and add some fresh thyme.
- Sprinkle with a little flakey sea salt, and serve right away!

Annie this looks delicious! Great idea of mixing the goat cheese with mascarpone! We have some wonderful strawberries at our farmer’s market and they would be so good in this.
I also haven’t grown my own, but I love the idea of doing it in your containers. I need those. Your table looks great and so are the pretty napkins and plates. Thank you for asking me to do this! I am making another one this morning for us all to eat!
