Balsamic Strawberries with Creamy Goat Cheese on a Tartine

A simple tartine with balsamic strawberries that’s perfect for a summer lunch.

  • 1 pint strawberries
  • 1/4 cup white sugar
  • 23 slices of rustic bread
  • Olive oil
  • 2-ounces goat cheese with honey
  • 2-ounces mascarpone cheese
  • Balsamic Glaze
  • Fresh Thyme
  • Flakey Sea Salt

Instructions

  1. Wash and hull the strawberries and place the whole strawberries in a saucepan. Add the sugar and cook over low heat until the juices release. Cook for about 15 minutes, stirring often, and be careful not to break up the fruit. Drizzle some balsamic on the strawberries and stir to combine. The amount is based on how you like them. I probably add a couple of tablespoons. 
  2. Add the goat cheese and the mascarpone to a small bowl and mix together with a fork (or alternatively, you could whip them together in a food processor for a velvety texture. I prefer the tartines to be a little more rustic, so the mashing with a fork combine worked perfectly.
  3. Add a little lemon zest to the cheese. 
  4. Prepare the bread. Add a little olive oil or butter and fry or place on a griddle. Toast both sides.
  5. Spread with a generous amount of the cheese mixture.
  6. Spoon the balsamic strawberries on top and add some fresh thyme.
  7. Sprinkle with a little flakey sea salt, and serve right away!
