Make these Orange Marmalade Scones

If you are lucky to live where you have an abundance of oranges during citrus season, then, by all means, make these delicious orange marmalade scones. The pink glaze comes from the juice of blood oranges.

These are not scones with a side of marmalade, although we did decide to do that too; these are scones where the add-in is the homemade orange marmalade! It’s incorporated into the scone dough. My friend Diane lives part-time in LA, so on a recent trip home to Westport, she told me about this small shop in her neighborhood that sells seasonal scones. And, since its citrus season in California, the scones were made with orange marmalade. 

I LOVE making scones of all kinds. And, of course, I like to keep it seasonal. I make strawberry and blueberry in the summer and pumpkin and cinnamon apple in the fall. So, I love these scones with homemade orange marmalade added in for winter.

​First, Make the Orange Marmalade

First, you’ll need to make the orange marmalade. You could use store-bought, but what’s the fun in that? I picked up quite a supply of oranges at Trader Joe’s and had more than enough to make 1 1/2 jars of homemade marmalade. I used this recipe.

You Only Need 4 Ingredients for Marmalade

You only need four ingredients. Oranges, a lemon, sugar and water. I added a few red pepper flakes and a cinnamon stick as well. 

Shopping List for Marmalade and Scones

  • 4-5 Oranges
  • Butter
  • Lemon
  • All-purpose flour
  • Sugar
  • Eggs
  • Baking powder
  • Salt
  • Heavy cream or buttermilk
  • Vanilla

Special Equipment You Will Need:

​For the orange marmalade:

  • Sharp knife and cutting board
  • Hand-held juicer (for the lemon)
  • Microplane to zest lemon
  • A medium-heavy pot like a Le Creuset
  • A wooden spoon
  • Glass jars with lids to store marmalade in the refrigerator

For the scones:

  • Measuring cups and spoons
  • Large mixing bowl
  • Small bowl
  • Pastry cutter or pastry blender
  • Bench scraper
  • Box grater for grated butter
  • Pastry brush
  • Rubber spatula
  • Parchment paper 
  • Baking sheets 
  • Wire rack

The Tips that Make Scones Turn Out Everytime!

If there’s one thing I have learned about making scones, is that you need to use frozen butter. Then, you will need to grate the butter and freeze it again so it’s very cold when you add it to your dry ingredients. Cold butter is key to making the most tender and delicious scones. 

The cold butter ensures that when incorporated into the flour mixture, it will blend quickly, and you’ll have a dough that resembles the size of small peas. Using room temperature butter will make it difficult to combine the dough without overworking it, causing the dough to become tough.

I keep a box of butter in the freezer at all times. When I know I’ll make scones, I’ll grate the butter and store it in a freezer bag. It saves time and makes it so much easier to throw the rest of the ingredients together!

I always bake my scones the morning I plan to serve them, but I often make the dough the day before. It’s easy to make the dough ahead. The dough forms into a disk, is placed on a plate with some flour or parchment paper, and is covered with plastic wrap. The next day, remove the disc from the refrigerator, place it on a lightly floured surface, and cut it into eight pieces. 

Place scones on a prepared baking sheet, and use an egg wash or a little heavy cream. In about 20 minutes, you’ll have warm scones. You can add an orange glaze or serve with orange butter. 

Scones are the ultimate breakfast treat or perfect for afternoon tea.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons butter (1 stick)
  • 1/2 cup heavy cream or buttermilk* 
  • 1 egg, plus an additional egg for egg wash
  • 1 teaspoon vanilla
  • 1/2 to 1 cup orange marmalade
  • Turbinado sugar for topping (optional)
  • Juice of one orange, plus powdered sugar to make glaze (optional)

Instructions

  1. Whisk the flour, sugar, salt, and baking powder in a large bowl. 
  2. Add in the grated frozen butter, and combine the dough with a fork or a pastry cutter until small pea size (or smaller). Place in the refrigerator while you combine the wet ingredients.
  3. Whisk the egg, heavy cream, or buttermilk, and vanilla in a separate bowl and pour over the dry ingredients. Combine just until there are very few dry ingredients in the bowl. Add in the marmalade and combine into the dough. 
  4. Place the dough onto a floured surface, quickly shape it into a ball, and flatten it into a disc about 6 inches in diameter. Wrap in plastic wrap and place in the refrigerator until ready to bake. (Can be made ahead and baked the next day or frozen in a freezer bag).
  5. When ready to bake, preheat oven to 350º.
  6. Remove the disc from the refrigerator, place it on a lightly floured board, and cut it in half, then again, until you have eight pieces.
  7. Place on a baking sheet lined with parchment paper about 2″ apart. Brush with extra heavy cream or an egg wash. Sprinkle with turbinado sugar.
  8. Bake for 18-20 minutes until they start to get golden. Remove from the oven and place on a cooling rack.
  9. Once cooled slightly, drizzle a little glaze if using. Enjoy!

Notes

If you don’t have heavy cream or buttermilk on hand, use 1/2 cup milk and 1 1/2 teaspoons white vinegar to make buttermilk.
