Making Easy Strawberry Scones
Fresh scones, especially warm strawberry scones, remind me of London. And since it’s almost time for Wimbledon, what’s better than a strawberry scone while watching tennis? Wimbledon starts July 3rd!

Over the years, I’ve made a variety of scones with different levels of success. Sometimes they worked perfectly, and other times, they were dry – until I discovered the secret ingredient to the best scones. There are few recipes where a seemingly ordinary ingredient has the power to create extraordinary results. Who would guess that grated, frozen butter is the fail-proof trick that turns good scones into perfect scones?
I learned this secret ingredient from Sally’s Baking Addiction and have been using it ever since. Sally’s Baking Addiction freezes the butter and grates it in a food processor or box grater. I added my twist, and I froze the butter again after grating. Then, when adding butter and rolling out the dough, you don’t want the butter to incorporate into the dough fully. Leaving little pockets of butter provides for a much moister and flakier crust.

I like to have freshly baked scones when we have overnight guests or people stopping by for coffee on the weekend. For starters, they make the house smell wonderful. And they’re also easy to eat while chatting, standing, or sitting and catching up. Almost everyone likes scones.

One of my summertime favorites is scones with fresh strawberries. Here’s how I make them:
Combine the flour, baking soda, salt, and sugar in a large mixing bowl. Briefly blend in the frozen butter using an electric mixer set at the lowest speed and fitted with the paddle attachment. Quickly combine the cold ingredients (eggs and heavy cream), add them to the butter and flour mixture, and blend until combined.
Or, you can mix by hand. Using frozen shredded butter makes it so easy for the dough to come together quickly. So if you don’t want to get out the mixer, no problem! Just mix the dry ingredients together and then the wet ingredients. Adding the strawberries last, so they stay in shape.
Remove the dough to a well-floured surface. Flour your hands and shape the dough into a disk that’s about 8″ in diameter or the size of a salad plate. Cover in plastic wrap and place in the refrigerator for at least an hour or overnight is fine too!
Cut the dough into four quarters with a sharp knife or pastry cutter. Then cut each quarter in half. This makes 8 average size scones. You could cut the disk in half and then each half into thirds for slightly larger scones.
Place the triangles on a prepared baking sheet lined with parchment paper and brush the tops with heavy cream. Sprinkle the tops with coarse sugar, pop them in the oven, and bake until a nice golden brown.
Remove the scones from the oven and cool the scones on a wire rack. Spread the glaze while on the wire rack. Allow to cool a little first.

Ingredients
- 2 cups flour
- 1/2 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoons salt
- 1/2 cup (1 stick) frozen unsalted butter
- 1/2 cup cold heavy cream
- 1 egg
- 1/2 cup chopped strawberries
- 1 teaspoon vanilla
- 2 tablespoons heavy cream to brush on scones before baking (or you could use an egg wash)
Instructions
- Freeze 1/2 stick of butter. Using a food processor or box grater, grate the butter. Place grated butter in a freezer bag and return to the freezer until just before needed.
- Preheat oven to 400º
- Combine the flour, baking soda, salt, and sugar in a large mixing bowl. Briefly blend in the frozen butter using an electric mixer set at the lowest speed and fitted with the paddle. Combine the egg and heavy cream in a separate bowl, and beat lightly. Add the cold ingredients to the butter and flour mixture and blend until combined. Then add in the strawberries, and mix carefully to combine into the dough.
- Remove the dough to a well-floured surface. Flour your hands and shape the dough into an 8″ disc. Then cover and refrigerate for at least an hour or overnight.
- With a sharp knife or pastry cutter, cut the dough into quarters. Then cut each quarter in half to make 8 scones.
- Place the triangles on a prepared baking sheet lined with parchment paper and brush the tops with heavy cream. Sprinkle with Turbinado sugar, pop them in the oven, and bake 20 to 25 minutes until golden brown.
- Remove the scones from the oven and place them on a wire rack for cooling. If using glaze, drizzle it on top of the scones after they have cooled a little.
- Serve warm or at room temperature.
Notes
- I like to grate the butter the night before using it and return it to the freezer.
- When ready to bake the scones, place them on a baking sheet and then refrigerate for at least 15-30 minutes before baking. This helps them keep their shape, and they won’t flatten out.
- This recipe makes 8 scones.
