Orange Marmalade Scones

The secret to good scones is frozen grated butter and an add-in like orange marmalade for flavor.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons butter (1 stick)
  • 1/2 cup heavy cream or buttermilk* 
  • 1 egg, plus an additional egg for egg wash
  • 1 teaspoon vanilla
  • 1/2 to 1 cup orange marmalade
  • Turbinado sugar for topping (optional)
  • Juice of one orange, plus powdered sugar to make glaze (optional)

Instructions

  1. Whisk the flour, sugar, salt, and baking powder in a large bowl. 
  2. Add in the grated frozen butter, and combine the dough with a fork or a pastry cutter until small pea size (or smaller). Place in the refrigerator while you combine the wet ingredients.
  3. Whisk the egg, heavy cream, or buttermilk, and vanilla in a separate bowl and pour over the dry ingredients. Combine just until there are very few dry ingredients in the bowl. Add in the marmalade and combine into the dough. 
  4. Place the dough onto a floured surface, quickly shape it into a ball, and flatten it into a disc about 6 inches in diameter. Wrap in plastic wrap and place in the refrigerator until ready to bake. (Can be made ahead and baked the next day or frozen in a freezer bag).
  5. When ready to bake, preheat oven to 350º.
  6. Remove the disc from the refrigerator, place it on a lightly floured board, and cut it in half, then again, until you have eight pieces.
  7. Place on a baking sheet lined with parchment paper about 2″ apart. Brush with extra heavy cream or an egg wash. Sprinkle with turbinado sugar.
  8. Bake for 18-20 minutes until they start to get golden. Remove from the oven and place on a cooling rack.
  9. Once cooled slightly, drizzle a little glaze if using. Enjoy!

Notes

If you don’t have heavy cream or buttermilk on hand, use 1/2 cup milk and 1 1/2 teaspoons white vinegar to make buttermilk.
