Looking for a fun but easy dessert that will make everyone feel like a kid again? Make this easy and delicious ice cream sundae bark as a topping for vanilla ice cream or gelato.
Making bark for every holiday is always a hit, but it is so fun as a topping for ice cream when the weather warms up! It’s easy to make and so good on creamy ice cream, maybe with some Hershey’s chocolate sauce.
Unlike the peppermint bark at Christmas, which consists of white chocolate and crushed peppermint candy, the ingredients for the ice cream sundae bark are a little more fun and colorful. Think sprinkles and cherries on chocolate.
What is candy bark?
It’s simply melted chocolate on a shallow pan (a rimmed cookie sheet), sprinkled with candy, sprinkles, and cookie bits, and set in the refrigerator or freezer.
The ingredients you’ll need for ice cream sundae chocolate bark:
Break up the squares of chocolate and, arrange them on a cookie sheet, and melt them in a 175º oven for only four minutes and glossy and melty.

- Chocolate bars –dark, milk, white, or a combination
- Maraschino cherries
- Sprinkles
- Ice cream cones. Traditional cone or sugar cone
- Mini marshmallows
- Chocolate chips
- Peanuts
- Sea salt
- Classic fudge-filled tip ice cream candy cone cookies (I use Trader Joe’s)
How do you make candy bark?
Making ice cream sundae bark could not be easier. There is no need for a double boiler or any special equipment. Simply unwrap the candy bars, lay them on a rimmed cookie sheet lined with parchment paper, and place them in a 175º oven for about four minutes or until they’re nice and melty. Be careful not to let the chocolate melt into a pool if you want to swirl the different types of chocolate together.
If you are using a combination of milk, dark, and white chocolate, arrange in a pattern on the cookie sheet. Then, when the chocolate comes out of the oven, take a toothpick or skewer and gently swirl the different kinds of chocolate to create a pattern or random swirls, which I like!
Add your candy, sprinkles, ice cream cone bits, and maraschino cherries on top of the melted chocolate while still melty and soft. Refrigerate or freeze until hardened.
Gently break into pieces and store in an air-tight container until ready to use.
Use it as a topping on ice cream
Break it into smaller pieces, serve with a bowl of vanilla ice cream, and drizzle chocolate or caramel on top.
Give it as a gift!
A jar, a pastry box of ice cream sundae bark, and a pint or two of ice cream would make a lovely host gift.
Or, instead of breaking up the bark and storing it in a jar or pastry box, keep it in the pan intact and include a wooden chocolate hammer (also known as a crab mallet). Let the recipient have the fun of breaking up the bark.
