Here’s a recipe for a healthy oatmeal blueberry muffin that you are going to love! It’s way more healthy with a few substitutions similar to this recipe for another favorite around here! In case you are new to MLT, every Sunday I join my friends Mary Ann and Cindy for our five favorite finds of the week. It’s like we are meeting for coffee and catching up, only we do it here on our blogs instead! Mostly because we all live in different places, Mary Ann and Cindy are both in California and I’m in Connecticut.
These blueberry muffins are on the top of the list of my five faves this week. If you type in blueberry muffins, you’ll get a plethora of choices. Even by adding”healthy” to the search, you’ll get a lot. I tried a few and finally, this one with oatmeal is the best one. Not too sweet, a little tart, but quite good for a “healthy” blueberry muffin!
There’s no refined sugar, white flour has been replaced with whole wheat white and there’s a full cup of blueberries in a recipe that makes 12 average size muffins. Which means…I might have two!


Substitutions to make these muffins a little healthier
- maple syrup instead of sugar
- whole wheat white flour instead of all-purpose white flour
- almond milk instead of regular milk
Additional substitutions if you wanted these muffins to be plant-based
- Use one tablespoon flaxseed and three tablespoons water to substitute one egg
- Use melted coconut oil instead of melted butter
Ingredients I used

- oats
- almond milk
- whole wheat white flour
- butter
- egg or egg substitute
- maple syrup
- baking powder, baking soda and salt
- cinnamon
- vanilla
- blueberries

These muffins are healthy AND delicious!

- Cook Time: 20 minutes
- Total Time: 40 minutes
- Yield: 12 1x

Ingredients
- 1 cup almond milk
- 1 cup old fashioned oats
- 1 1/4 cups white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 egg or egg substitute
- 1/2 cup butter (melted and slightly cooled)
- 1/2 cup maple syrup
- 1 cup fresh blueberries
Notes
- Preheat oven to 375º and prepare a 12 cup muffin tin. Spray the tin or paper liners.
- Combine the oats and milk and let sit for 15 minutes letting the oats soak up the milk.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon and whisk together.
- In a large bowl, whisk together the butter, maple syrup, egg, and vanilla. Then add the soaked oats and combine.
- Add the dry ingredients and stir to combine, then fold in the blueberries.
- Using a large ice-cream scoop with a release, fill 12 cups.
- Sprinkle little extra dry oat and turbinado sugar on top of each and bake for 20 minutes.

I received my Baker’s Seed catalog in the mail. It’s 532 pages of heirloom seeds from around the world. It makes me wish our garden were a little (okay a lot) bigger. But that’s not stopping me from making plans for our spring garden with four of these.

That muffin recipe looks amazing. It’s similar to the one I make with honey. But yours is heart-healthy with the oatmeal!!!
Muffins look fabulous! I am eating low carb, low sugar to lose Covid pounds. I eat less than 25 carbs and under 10 grams of sugar per day, think these would fall into this category? It is basically the South Beach diet. So far, I lost 35 lbs in 4 months.
