These muffins are healthy AND delicious! 

Ingredients

  • 1 cup almond milk
  • 1 cup old fashioned oats
  • 1 1/4 cups white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1 egg or egg substitute
  • 1/2 cup butter (melted and slightly cooled)
  • 1/2 cup maple syrup
  • 1 cup fresh blueberries

Notes

  1. Preheat oven to 375º and prepare a 12 cup muffin tin. Spray the tin or paper liners.
  2. Combine the oats and milk and let sit for 15 minutes letting the oats soak up the milk.
  3. In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon and whisk together.
  4. In a large bowl, whisk together the butter, maple syrup, egg, and vanilla.  Then add the soaked oats and combine.
  5. Add the dry ingredients and stir to combine, then fold in the blueberries.
  6. Using a large ice-cream scoop with a release, fill 12 cups.
  7. Sprinkle little extra dry oat and turbinado sugar on top of each and bake for 20 minutes.
