- 1 cup almond milk
- 1 cup old fashioned oats
- 1 1/4 cups white whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 egg or egg substitute
- 1/2 cup butter (melted and slightly cooled)
- 1/2 cup maple syrup
- 1 cup fresh blueberries
Notes
- Preheat oven to 375º and prepare a 12 cup muffin tin. Spray the tin or paper liners.
- Combine the oats and milk and let sit for 15 minutes letting the oats soak up the milk.
- In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon and whisk together.
- In a large bowl, whisk together the butter, maple syrup, egg, and vanilla. Then add the soaked oats and combine.
- Add the dry ingredients and stir to combine, then fold in the blueberries.
- Using a large ice-cream scoop with a release, fill 12 cups.
- Sprinkle little extra dry oat and turbinado sugar on top of each and bake for 20 minutes.
