Grilled Peaches With Whipped Ricotta, Toasted Pistachios, and Thyme

Joining a few friends to share our easy summer recipes, and this one could not be any easier. It’s best when peaches are at their peak. I must admit I never even liked peaches until we received a box from the Peach Truck. Now I LOVE peaches and can’t stop looking for recipes that feature peaches.
You might ask, Why grill peaches? Grilling the peaches is a great way to bring out their natural sweetness while also adding a bit of caramelized flavor to them. And it really couldn’t be easier. This dish is a great appetizer or a light lunch to serve with a few friends on the porch in August. It just tastes like summer.
The ingredients you’ll need for this grilled peach dish

- Ripe peaches (You want them to be slightly soft when you gently squeeze them. Over-ripe peaches, while they taste great, may fall apart on the grill.)
- Whole milk ricotta cheese
- Pistachios (or your nut of choice)
- Fresh thyme leaves
- Fresh baguette
- Salt and black pepper to taste
Here is how I grill peaches




- Make sure your grill grates are clean and free from charred bits from your last use. Otherwise, the charred bits will stick to the peaches and add a burnt flavor. Then, preheat your grill on medium-high. If you don’t have a grill, a grill pan on the stove works just fine.
- Slice the peaches in half following the natural seam of the peaches. Twist each half in the opposite direction to break them apart, remove the pit from one half, and set it aside. Add a pinch of salt and pepper to each piece of fruit.
- Drizzle a little olive oil on the cut side of the peaches and brush it to coat the peaches evenly.
- Lightly oil the grill grate, and place peaches cut side down on the grill, and grill for 4 to 5 minutes to ensure you have beautiful grill marks. Resist the urge to touch the peaches as you want perfectly seared grill marks. This step is optional, but turn the peaches over and cook the bottom side for 3 to 4 minutes.
- Using tongs, gently remove the peaches to a tray and set aside.
For the bread


- Slice the baguette into approximately 1/2″-thick slices.
- Using butter or olive oil, coat one side of the bread slices.
- Place the slices of baguette, buttered or oiled side down, on the grill and grill for about 3 to 4 minutes until lightly toasted with distinct grill marks.
- Transfer the grilled baguette slices to a plate and set aside.
Assembling this easy grilled peaches dish



- Meanwhile, blend the ricotta cheese in a food processor until smooth and creamy, then transfer the mixture to a small bowl.
- Using a small skillet on medium heat, toast the pistachios until lightly golden. Transfer the pistachios to a cutting board and chop the nuts into small pieces.
- Remove thyme leaves from the stems and set aside.
- Place two grilled peach halves on each of the small plates.
- Spoon a healthy amount of the whipped ricotta on each plate and garnish it with a sprinkle of chopped pistachios and fresh thyme leaves.
- Serve immediately with a few slices of toasted baguette on each plate and enjoy!

I love peaches and grew up peach picking with my siblings and grandmother who would can/preserve them for the winter. As for the Peach Truck, they are fabulous! We give and have received many gift certificates for their scrumptious peaches.
Your grilled peaches look delicious. An easy summer sweet that everyone will love! I could also see your whipped ricotta used for braised cherries, with stewed apples and any other fruit topping one can think of.

THe Peach Truck is a mail order compnay, but they are sold out for the season! Sadly! They really are the best. Expensive, but worth every penny!
