Make this fun and easy goat cheese, ham, peach, and fresh thyme tartine using your leftovers from dinner last night and breakfast this morning. My favorite thing about tartines is that you can use whatever you have on hand to make one. You can follow a recipe or create your own. There are no rules.
Last night, we arrived late at our Airbnb in the south of France. Our host had a fantastic late-night dinner prepared for us. Locally sourced ham and fresh goat cheese with thyme sprigs, tomatoes, and sliced red summer onions from her father-in-law’s garden with mozzarella (so fresh it was almost a burrata, or maybe it was), a wonderful country terrine, olive oil, and a balsamic vinegarette, and, of course, a baguette from the local bakery.
It’s just what we needed after a seven-hour drive heading from Paris to the tiny town of Chamaret in the Provence region. But, there was too much food for one meal. As we finished eating and looked at all the leftover food, I knew we had the ingredients for this week’s Tartine Tuesday.
The next morning she brought fresh croissants and homemade jams, granola and yogurt, the last of their summer peaches, and again, another fresh baguette. And that’s when I decided on the goat cheese, ham, peach, and fresh thyme tartine. And the best part, I didn’t even have to make a run to the market.
Fresh local ingredients – no matter where you are
- One baguette sliced in half lengthwise or slices of your favorite French country or Italian bread
- Fresh sliced peaches
- Good goat cheese
- Thin slices of French ham or prosciutto
- Fresh thyme sprigs, leaves removed and finely chopped
- Salt
- Black pepper
- good olive oil
Very little equipment needed
- Something for toasting the bread: cast iron skillet, grill, panini maker, oven broiler, frying pan
Easy recipe instructions
- Slice the peaches to your desired thickness
- Spread a thin layer of butter or olive on the slices of bread and toast (I like to toast one side and leave the other side somewhat soft)
- Spread a thin layer of goat cheese on the bread
- Place thin slices of ham on top of the goat cheese
- Top with fresh peach slices
- Drizzle with a little olive oil
- Sprinkle with fresh chopped thyme leaves
- Serve on its own or with a small side salad
If you don’t have everything on hand, here are some possible substitutions
- Apples with blue cheese and a drizzle of honey could be nice
- You could substitute prosciutto for the ham
- Pears could also work well here with goat cheese
- Caramelized shallots and figs could also work
- Fresh basil goes well with almost all fruits
