Afternoon Cucumber Tea Sandwiches with Cream Cheese & Chives
For Sunday Favorites with Mary Ann and Cindy, I’m sharing an idea for making afternoon cucumber tea sandwiches with cream cheese and chives. Invite your besties over for these finger food tea sandwiches. Keep it simple and old-school, and serve with Lay’s potato chips and mini Diet Coke!

Here’s what you’ll need to make these cucumber tea sandwiches with chive sprinkles
- Sandwich bread – I like thin sliced Pepperidge Farm white sandwich bread
- Spreadable cream cheese or whipped cream cheese
- Fresh chives and dill
- English cucumbers
- Salt
A few things that will make things easier when making dainty little sandwiches
- A mandolin will slice that cucumber the same size quickly; I use this one from OXO, and I always wear a knife glove to be extra safe! The OXO mandolin is less than $20 and is the only one I ever use.
- A serrated knife and cutting board
- Paper towels
- Kitchen scissors are used to make the chive “sprinkles.”
- Freeze the bread slices and let the cream cheese soften a bit.
- Slice the cucumber very thin using a mandolin and lay in single layers on a paper towel to remove excess moisture.
- Mix the almost room temperature cream cheese with chopped chives, dill, and a pinch of salt.
- Using a serrated knife, stack four slices of bread and cut off the crusts on all four sides. Repeat until your bread is ready.
- Then, spread a good smear of the herb cream cheese on one side.
- Layer the thin cucumbers and top with a slice of bread. Cut in half or quarters and spread a layer of cream cheese on one corner. Dip into a tray of fresh herbs like chives.
- Place on a tray and serve immediately, or cover with plastic wrap or place in an airtight container and refrigerate.







These little cucumber sandwiches are perfect for a light lunch, a bridal or baby shower, Mother’s Day brunch, school lunches, or an afternoon tea party. They are so easy to make but just a little extra special.
Of course, they would be perfect served with tea, but instead, we ate them with Lay’s potato chips and a mini can of diet Coke at our little bistro table in the garden.

I just ordered this dress from Quince. There’s so much I love about it! The dress is made of organic cotton poplin. I have worn this poplin top no less than three times a week since it arrived. It dries so quickly and hardly even needs to be pressed.
I think this dress is perfect for travel. I’ll wear it with Birkenstocks and a tote bag to the flea market in Paris, and then I’ll probably wear it with oxfords and a black bag for dinner.

A simple sandwich with cucumbers and chives.
- Prep Time: 15 minutes
- Cook Time: none
- Total Time: 15 minutes
- Yield: 2-4
Ingredients
- Thin white sandwich bread
- Thin sliced cucumbers
- Whipped or spreadable cream cheese
- Chives and dill
- Salt
Instructions
- Freeze the sandwich bread which makes trimming the crusts easier as well as spreading the cream cheese. The bread is so thin that it will thaw before you’re finished.
- Mix the cream cheese, chives, dill and a pinch of salt.
- Slice cucumbers very thin, place on paper towels to remove excess water.
- Spread a layer of cream cheese on one side of each slice of bread.
- Layer with sliced cucumbers, and top with another slice of bread. Cut in half or in quarterrs.
- Spread more of the cream cheese on one corner and dip in to the chives.
- Arrange on a tray and serve.
Notes
Cucumber sandwiches can be made about an hour ahead and refrigerated, but they get a little soggy if you make them too far ahead.

Hi Annie, I really enjoy your blog and your original ideas! I have had my eye on the “Apple and the Pear” poster since I saw it in your last home above your banquette and was just waiting for the right space for it. I have finally found it and just purchased it. That being said, the dimensions were not available on the website and I was hoping to get some advise on the frame that your purchased. Where/size? Hi Cindy! How exciting that you found space for the apple pear poster! I love mine and when we moved, I made sure to find a new spot for it. The print (or poster) is 30.7″ high and 40″ wide. I did take it to a frame shop to have it professionally framed for two reasons. First, I could not find a ready made frame the exact size, and I didn’t want to cut the words on the upper left corner, and the second reason is that I wanted glass that would protect it from fading in the sun. I chose a black metal frame and it was probably the least expensive option, and I’m happy with it! I would love to see yours when you’ve hung it! Thank you for your kind words!
