A salad that celebrates summer in the best possible way! We had 12 pounds of peaches from The Peach Truck, so basically every dish, meal, and dessert we ate over the last 2 weeks has involved peaches! And I’m not mad about it! The perfect thing to share for Sunday favorites with Mary Ann and Cindy!

I’ve always been relatively indifferent to peaches. The problem is that if peaches aren’t good, they are bad, IMO. Anyway, if you love peaches or could take them or leave them, peaches from The Peach Truck are incredibly delicious. Delicious enough for any dish, and especially this summer salad! What’s in this summer salad, besides peaches

  • Vine-ripened tomatoes – We happen to have the most delicious tomatoes in our garden this year. And as luck would have it, there were several on the vine on the day we wanted to make this salad. They were still warm from the sun when we ate them.
  • Ripe peaches cut into wedges
  • Strawberries
  • Burrata cheese
  • Good olive oil (we used Cindy’s olive oil, which she bottles from her olive trees).
  • Flaky salt and freshly ground black pepper
  • Red and green basil leaves
  • Lemon and lime

Patio Lane for outdoor cushion replacement

We have used Patio Lane for custom cushions for our window seat in the attic and our built-in banquette that I recently shared in this post. We are now working with them to replace the outdoor cushions on our porch. We have a sectional from Target that is in good shape, but last year, squirrels damaged most of the cushions. I immediately turned to Patio Lane for new cushions.

Patio Lane has a cushion builder that makes it relatively easy, but I still had questions about the corner end seat back cushions due to their trapezoid shape. When I expressed this concern, we set up a FaceTime call, and they walked us through it in just ten minutes. It put our minds at ease, and we placed the order!

A Salad that Celebrates Summer

This salad, featuring peaches, tomatoes, strawberries, basil, and burrata, is the perfect summer dish. It’s so good, we made it two days in a row. How often can you say that about a recipe?

Ingredients

Scale
  • 6 ripe tomatoes of any variety (we used the first tomatoes from our garden, and they were so good!)
  • 2 ripe peaches sliced lengthwise 1/4″ thick
  • 8 ounces fresh, ripe strawberries, hulled and quartered
  • 1 large ball of burrata (you can use pieces of mozzarella if you don’t have burrata, but it’s not quite as good)
  • 2 tablespoons of good olive oil
  • Sea salt
  • Fresh pepper
  • A handful of basil leaves (I like to use the small leaves whole, but you can tear pieces of larger basil leaves)
  • 1 lemon
  • 1 lime

Instructions

  1. Cut the tomatoes lengthwise into quarters or bite-sized pieces (depending on the type and size of tomatoes) and place them on the serving platter.
  2. Nestle the peaches among the tomatoes.
  3. Sprinkle the strawberries on top.
  4. Place the burrata ball in the center of the dish and make small slits in the shape of an X on top.
  5. Drizzle a little olive oil over the entire dish.
  6. Sprinkle salt and pepper to taste over the top of everything.
  7. Spread the basil leaves over the dish.
  8. Zest the lemon and the lime over the dish using a Microplane.
  9. Cut the lemon and the lime in half and juice one half of each, and pour the juice evenly over the salad.
  10. Serve immediately and enjoy the flavors of summer!

    I have used Patio Lane for my window seat. It is an awkward L shape. With their guidance I made a pattern from wrapping paper. The three pillows fit like a glove. They were about half the price I was quoted here. I highly recommend them!

    Thank you Patio lane recommendation I will keep them in mind when I do my outside pillows we have the same problem with squirrels in Southern California! Your salad is divine, thank you for that. I am trying to lose weight ( hard at 61) but I cannot resist a burrata salad in the summer and go to my Farmers marker and the cheese stall and pick it up there. The colors in that salad are gorgeous!! Happy week xo

    1. Hello Francesca! It took me a while to figure out it was squirrels! And during the day…I cover it at night, but it just takes one time. Patio Lane is the best! Both Mary Ann and I have used them!

      I’m trying to lose weight too! It was all those croissants this last trip…I can no longer get away with it. So frustrating, because I just love to eat! haha

      California farmers markets are the best! I miss those!

    1. Mary Ann, where you live, I’ll bet you get great peaches even at the grocery store. I do think summer is best even for Georgia peaches! THese peaches though are worth every penny!
