A Salad that Celebrates Summer

Caprese salad with tomatoes, peaches, strawberries, basil and burrata.

This salad, featuring peaches, tomatoes, strawberries, basil, and burrata, is the perfect summer dish. It’s so good, we made it two days in a row. How often can you say that about a recipe?

Ingredients

  • 6 ripe tomatoes of any variety (we used the first tomatoes from our garden, and they were so good!)
  • 2 ripe peaches sliced lengthwise 1/4″ thick
  • 8 ounces fresh, ripe strawberries, hulled and quartered
  • 1 large ball of burrata (you can use pieces of mozzarella if you don’t have burrata, but it’s not quite as good)
  • 2 tablespoons of good olive oil
  • Sea salt
  • Fresh pepper
  • A handful of basil leaves (I like to use the small leaves whole, but you can tear pieces of larger basil leaves)
  • 1 lemon
  • 1 lime

Instructions

  1. Cut the tomatoes lengthwise into quarters or bite-sized pieces (depending on the type and size of tomatoes) and place them on the serving platter.
  2. Nestle the peaches among the tomatoes.
  3. Sprinkle the strawberries on top.
  4. Place the burrata ball in the center of the dish and make small slits in the shape of an X on top.
  5. Drizzle a little olive oil over the entire dish.
  6. Sprinkle salt and pepper to taste over the top of everything.
  7. Spread the basil leaves over the dish.
  8. Zest the lemon and the lime over the dish using a Microplane.
  9. Cut the lemon and the lime in half and juice one half of each, and pour the juice evenly over the salad.
  10. Serve immediately and enjoy the flavors of summer!
