The Easy Secret to Making Perfect Strawberry Scones

Fresh strawberry scones are the perfect way to start a summer morning. 

Ingredients

  • 2 cups flour
  • 1/2 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1/2 cup (1 stick) frozen unsalted butter
  • 1/2 cup cold heavy cream
  • 1 egg
  • 1/2 cup chopped strawberries
  • 1 teaspoon vanilla 
  • 2 tablespoons heavy cream to brush on scones before baking (or you could use an egg wash)

Instructions

  1. Freeze 1/2 stick of butter. Using a food processor or box grater, grate the butter. Place grated butter in a freezer bag and return to the freezer until just before needed.
  2. Preheat oven to 400º
  3. Combine the flour, baking soda, salt, and sugar in a large mixing bowl. Briefly blend in the frozen butter using an electric mixer set at the lowest speed and fitted with the paddle. Combine the egg and heavy cream in a separate bowl, and beat lightly. Add the cold ingredients to the butter and flour mixture and blend until combined. Then add in the strawberries, and mix carefully to combine into the dough.
  4. Remove the dough to a well-floured surface. Flour your hands and shape the dough into an 8″ disc. Then cover and refrigerate for at least an hour or overnight. 
  5. With a sharp knife or pastry cutter, cut the dough into quarters. Then cut each quarter in half to make 8 scones.
  6. Place the triangles on a prepared baking sheet lined with parchment paper and brush the tops with heavy cream. Sprinkle with Turbinado sugar, pop them in the oven, and bake 20 to 25 minutes until golden brown.
  7. Remove the scones from the oven and place them on a wire rack for cooling. If using glaze, drizzle it on top of the scones after they have cooled a little.
  8. Serve warm or at room temperature.

Notes

  • I like to grate the butter the night before using it and return it to the freezer.
  • When ready to bake the scones, place them on a baking sheet and then refrigerate for at least 15-30 minutes before baking. This helps them keep their shape, and they won’t flatten out.
  • This recipe makes 8 scones.
