a pasta dish you’ll want to make for a winter night and since we still have 35 days until spring, there’s plenty of time! It’s Sunday, so I am joining my friends Cindy and Mary Ann and wishing I could have them over for this cozy dinner.
For this dish, I had the opportunity to work with Esposito Sausage. They sent us a box of several kinds of sausage to try and we loved them all. Brent got pretty creative making three different recipes including this pasta. He also made a sausage ragu for hand pies that he made into hearts. How cute is that? You can see them on my Instagram.
Here’s what you’ll need for this cozy pasta dish

For this dish, there are many substitutions that would work great. A lot of times we use shallots over onions and spinach over another dark leafy green because we always have baby spinach on hand for smoothies.
orecchiette pasta
sausage
cannellini beans
fresh baby spinach (kale would work great too)
shallots and garlic
fresh parsley
tomato
lemon
olive oil

- Prep Time: 30 minutes
- Cook Time: 30 minutes
- Total Time: 60 minutes

Ingredients
- one pound Esposito’s Hot Italian Sausage, casings removed
- 12-ounce box of orecchiette pasta
- olive oil
- 1 shallot, minced
- 2 garlic cloves, minced
- 1 tablespoon dried thyme
- 4 cups chopped spinach
- 1 can cannellini beans, rinsed and drained
- 1 medium fresh tomato, chopped
Instructions
- Heat a large skillet and add about two tablespoons of olive oil. Cook the sausage until browned. Add the shallot. garlic and thyme and cook until shallots are translucent
- Add the spinach, beans, and chopped tomato and combine until warmed through.
- Meanwhile, cook the pasta making sure not to overcook. You want it al dente. Reserve 1/2 cup pasta water.
- Return the pasta to a large pot, add the sausage mixture and toss to combine. Drizzle the reserved pasta water to create a sauce.
- Put into one large pasta bowl or individual bowls, and sprinkle with fresh parsley, lemon zest, and parmesan. Drizzle with a little olive oil and serve immediately.

3. How to fix tangles & Knots in Chains with Olive Oil
I saw this article on jewelry repair and I was particularly interested in the technique to fix tangles and knots in chain necklaces. Dab a little olive oil on the knot which will help the tangles glide. Use a couple of straight pins to loosen the knot. I have never thought to add a little oil, but it helps, making the task much easier!
4. SHEIN Dickey Collars
Thoughts on dickey collars? I was thrilled to see so many options on the SHEIN website. I ordered a few and love adding one to a sweater or sweatshirt for Zoom calls or to wear anywhere!
5. Ginger Tea with Honey
A few weeks ago as I was checking out at an HMart in the city, I noticed a large jar of Ginger Tea with Honey. I quickly grabbed a jar to add to my order and have been obsessed ever since. I’m so glad I can order more! If you’ve ever had the hot lemon ginger and honey tea from La Pain Quotidien, it’s a lot like that!

That pasta is right up my alley! I will have to make it on a cheating day. Lately, I have had too many! That Esposito Sausage looks wonderful. I could seriously eat pasta every meal if I didn’t have to worry about my weight! OMG that ginger tea is calling my name. I am off to check that out!
