Mini Chewy Ginger Cookies

Ever since I made mini chocolate chip cookies and put them into Bonne Maman jars, I’ve been thinking, what other cookies would work as a mini? Well, turns out, my chewy ginger cookies are perfect for making into mini ones!
You might be wondering, How small are they? They are very tiny, which is what makes them so fun. You start with a marble-sized piece of dough and bake for only 6 minutes!



Wrap up your mini ginger cookies in Bonne Maman jars


Half the fun of making anything mini is finding creative and fun ways to gift them to friends. Bonne Maman jars with their red and white checked lids are just the thing. Then, to make it more fun, I added even more gingham with a bit of ribbon and a little silver bauble.
If you are not like me and have a stash of jam jars, you can buy these. This is the red and white gingham ribbon I used, along with a bit of green twine and a mini bauble ornament.
One of the great things about making ginger cookies is that if you are a baker, you most likely have the ingredients on hand.
Here is what you will need to make them:


- Flour
- Dark brown sugar
- Grandmas’ Mollasses
- Butter
- Egg
- Baking soda
- Salt
- Ginger, nutmeg, clove & cinnamon
- Vanilla
- Cinnamon sugar

Did you happen to see the 60 Minutes episode with Dr. Peter Attia? He was talking about grip strength as an indicator of longevity. I read this article that tells you ways to test your grip strength. The “hang method” seems to be the easiest. I’m going to try it at the gym later today…Have you tested your grip strength recently?

Mini Ginger Cookies

Ingredients
- 3 cups all-purpose flour
- 3/4 cup dark brown sugar
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 2 teaspoons ground ginger
- 1/2 teaspoon ground clove
- 1/2 teaspoon ground nutmeg
- 1 1/2 sticks or 12 tablespoons unsalted butter
- 3/4 cup dark molasses
- 1 large egg yolk
- 1 teaspoon vanilla
- Cinnamon sugar (for rolling the dough balls in before baking)
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl, sift the flour and then whisk together the flour, baking soda, salt, cinnamon, ginger, clove, and nutmeg until combined.
- In the bowl of a stand mixer, add the butter and dark brown sugar and mix on medium speed until it’s creamy and combined (about 3 minutes).
- Add the egg yolk, molasses, and vanilla, and continue to beat until combined.
- Add the flour mixture, one half at a time, to the bowl and mix on medium speed until a sticky dough has formed.
- Remove the dough from the stand mixer, shape it into a disk, wrap it in plastic wrap, and chill for about an hour.
- Take a small piece of dough and roll it between your hands to form a ball about the size of a marble.
- Roll the marble-sized piece of dough in a bowl of cinnamon sugar to coat and place it on a parchment paper-lined baking sheet. You may want to enlist some help as it does take some time make the marble-sized balls of dough.
- Place the baking sheet in the oven and bake for 6 minutes.
- Remove from the oven and immediately transfer the cookies to a wire rack for cooling.

Yes, I did listen to Dr. Peter Attia on 60 Minutes. I really liked him, I do agree with his way of seeing to care of your body starting at a young age. Exercise as much as you are able to do and eating right. Protein is so important and not consuming too much sugar. You know the drill. Also he has a podcast that my girlfriend told me about, she enjoyed.

Thanks for responding to me. We lived in North Scottsdale for 22 years, built our retreat in Oak Creek Canyon and had that for 22 years. Once we decided to semi retire from our business we wanted to be closer to Sedona so we sold our home in Scottsdale and moved to Anthem so we could be closer to our beloved home in Sedona.
You know Arizona well, I love your story and you met your husband here. How special AZ is to you. Wow, your sister and mother live here too. I imagine when you come to visit your time is precious. IF if if you ever have a spare window of time I would love to meet you for lunch.

HI Katherine! We love Sedona and Oak Creek! In fact, we got engaged in Sedona. I’m not sure where Anthem is, but I looked it up and it says about 29 miles from Scottsdale. I would love to meet sometime if it worked out with schedules and if I had a car etc….visitng family is all consuming!

Hi Michele, yes, I do use a lot of cinnamon and then roll them in cinnamon sugar. I might seem lke a lot, but I promise these cookies are so good and everyone I give them to loves them and starts making them!
