Sunday Favorites: Mini Apple Pies and Apple Compote from One Batch

Apple season is here, and this week I’m sharing a little kitchen trick I love: one pot of apples, used two ways.

I cooked a batch of the apple filling from my rustic slab apple pie on the stove. I used part of it for sweet mini apple pies, and the rest became an apple compote I’ve been spooning over my oatmeal all week. One afternoon of cooking gave me dessert today and cozy breakfasts for days.

Ingredients for mini apple pies and apple compote

What you’ll need:

  • Granny Smith apples
  • Store-bought pie crust
  • Granulated sugar
  • Light brown sugar
  • Cinnmamon
  • Butter

The apple filling

The filling comes straight from my rustic slab apple pie. This time I cooked it on the stovetop first. Mini pies don’t bake long enough to soften raw apples, so starting on the stove means tender apples in every bite. Make extra depending on how many mini pies you are making, so you have plenty left over for compote.

How to cook it:

  1. Toss the sliced apples with the sugar and cinnamon from the slab pie recipe.
  2. Add everything to a large pot over medium heat.
  3. Cook, stirring often, for about 20 minutes, until the apples are tender but still hold their shape and the juices have thickened.
  4. Let it cool a little before filling the pies.

Apple Compote for Oatmeal

The leftover filling is my favorite part. Spoon it into a clean jar for a ready-made apple compote for the week. To store: Keep it covered in the refrigerator for up to 5 days, or freeze it for up to 3 months.

Ways to enjoy it:

  • Warmed over a bowl of oatmeal with a splash of cream and a few toasted walnuts
  • Stirred into plain or vanilla yogurt
  • Spooned over pancakes or waffles
  • On top of vanilla ice cream for a quick dessert

If you’d like it a little saucier for breakfast, warm it with a spoonful of water or apple cider.

I met my friend Suzanne at the J.McLaughlin store she manages in Darien, CT, to talk about their upcoming fashion show to benefit the Stamford Health Bennett Cancer Center.

I’m wearing brown velveteen jeans and this gorgeous cashmere turtleneck with the prettiest details, like elevated stitching along the back and trimmed cuffs. I did size up so I can wear a shirt under it comfortably. The Finn striped shirt is a little bit oversized with a drop shoulder. It’s the perfect shirt to wear on its own, or layered under a sweater or jacket. It comes in this white and blue stripe combination too!
