How to Make Chocolate Truffles

I have to admit, I have never really thought too much about how to make chocolate truffles. That is until I saw The Cook’s Atelier post about them on their Instagram. When I saw the post, I knew this was what I wanted to make for this post today on chocolate desserts.

The Cook’s Atelier describes chocolate truffles as one of the most festive holiday desserts. And they serve them on Christmas Eve as part of the Thirteen Desserts. They make a lovely dessert for a dinner party and a lovely gift packaged up beautifully in a box or on a vintage plate.  Homemade chocolate truffles are easy to make, requiring only three ingredients.

  • High-quality chocolate
  • Heavy cream
  • Unsweetened cocoa powder (or sprinkles)

Is there butter in chocolate truffles?

I am using the recipe from the Cook’s Atelier cookbook and on their Instagram, which does not call for butter. I did see that Sally’s Baking Addiction does use a small amount of butter in her chocolate truffles. 

What kind of chocolate?

According to the Cook’s Atelier, you’ll need high-quality bittersweet chocolate at least 70% cacao.

Some options:

  • Guittard chocolate bars
  • Perugina bittersweet chocolate bars
  • Ghirardelli chocolate bars

Can I substitute chocolate chips for chocolate bars?

Chocolate chips are great for cookies when you don’t want the chips to melt. Chocolate chips have a stabilizer-like ingredient that keeps them from melting, so they would not be a substitute.

Chop the Chocolate

To make chocolate truffles, you must chop the chocolate into small pieces so that it will melt when the hot cream is poured over the chocolate. 

When you pour the cream to a simmer just before boiling, it will melt the chocolate while you are stirring. The dark chocolate has a very velvety texture.

How long does it take to make truffles?

This is not something you can make last minute. The chocolate melts with the hot cream, you will need to let the chocolate sit for at least an hour at room temperature or until the chocolate becomes firm. 

Then, they will need to be refrigerated to set.

Can chocolate truffles be made ahead?

They can be placed in an airtight container and stored in the refrigerator for up to two weeks. I love a dessert that can be made in advance.

We made these chocolate truffles using the recipe in the cookbook by The Cook’s Atelier. They also posted this recipe on their Instagram.

Ingredients

Scale
  • 1 lb. of good, high-quality chocolate (at least 70% cacao)
  • 1 cup heavy cream
  • Unsweetened cocoa powder for dusting

Instructions

  1. Chop the chocolate into small pieces.
  2. Place the chopped chocolate in a heat-proof bowl.
  3. In a small saucepan, heat the heavy cream to just before it boils.
  4. Pour the hot cream over the chocolate and stir with a rubber spatula until the chocolate becomes velvety smooth. 
  5. Let it stand at room temperature for an hour or until firm.
  6. Sift the cocoa powder into a shallow bowl.
  7. Using a spoon, scoop some chocolate and roll it in your hands until it forms a ball. It will be sticky.
  8. Roll the truffles in the cocoa powder until coated. Place the balls on a parchment-lined baking sheet.
  9. Refrigerate until set. Then place the truffles in an airtight container and refrigerate for up to two weeks.

Notes

Cook time includes 1 hour of cooling until forming the truffle balls and rolling them in cocoa powder.
