Grilled Corn Salad
What a year this has been! Have you started to get together for socially distanced barbecues in the backyard or even on the driveway? I see that a lot these days and I love it! People need to get together and while that may look a little different these days, we can make it work. In April, Cindy, Mary Ann, and I hosted our first group of bloggers for a virtual progressive dinner party and now we have a summer barbecue progressive dinner menu!
Grilled Corn Salad

For my part, I got off pretty easy…I made a summer corn salad. It’s so good and goes with everything! At least that’s what we think! We served it on the 4th of July alongside lobster rolls, but it’s great with a steak, a burger, chicken tacos…I really can’t think of anything that I wouldn’t pair it with…well maybe ice-cream!
Grilled Corn Salad
We love this grilled corn salad and we pair it with anything from the grill!
Ingredients
- 8 ears fresh corn, silks removed, soaked in cold water 30 minutes
- canola oil
- salt and freshly ground black pepper
- 1/4 cup creme fraiche
- 2 limes – Zest from one lime and juice from two.
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/4 cup chopped fresh cilantro leaves
- 1/4 cup grated cotija cheese
Instructions
- Heat grill to high. Grill corn until charred on all sides, about 8 minutes. Take off the grill and remove the kernels with a sharp knife. While you are cutting the corn, put a cast-iron skillet on the grill to heat.
- Add the corn and the remaining ingredients to the hot pan and cook, stirring occasionally, until creamy and heated through.
- Sprinkle a little more cotija cheese on top to serve.

I am a total sucker for a good corn salad. I can’t think of anything better when corn is fresh. I am going to try this one the next time I make fajitas. It sounds simple and wonderful. You are such a great cook. Lobster rolls, now that makes me jealous. We used to travel to main on Antique jaunts twice a year. We ate lobster every meal the minute we hit Maine.
OK, I must try this. I don’t ned company for this. I’m impressed that your chicken breasts are not burned. Mine would be on the grill. It all looks just lovely and inviting.
Those chicken breasts would indeed be burned if I had been the one at the grill, my husband is so much more patient than me!
