As a child, one of my favorite things to do on a hot summer day was to find a little bit of shade and enjoy some old-fashion ice pops. Sometimes we tried to make our own homemade fruit popsicles, which was really just frozen fruit juice in a popsicle mold, but they didn’t taste quite the same. We could never get the popsicle mixture or texture the way we thought they should be. The store-bought kind were the perfect frozen treats for an afternoon snack. Looking back, I’m sure they contained no healthy ingredients.
To this day whenever I’m at the grocery store and I happen to see popsicles, they still remind me of my childhood and a hot day in summer. So with the humid summer heat just around the corner, what better way to beat it than with a refreshing summer dessert?
When I first saw this easy homemade popsicles recipe (4 simple Ingredients) by Half-baked Harvest, I immediately knew I would make them! In the process, I forgot to add the vanilla extract, so technically, I made three-ingredient popsicles. And they were just fine, although vanilla extract does add a nice touch. While I wouldn’t exactly call them healthy popsicles, they are at least a healthier version of a perfect treat. The best part is, you can substitute your favorite fruits. I used a mixture of fruit preserves and lemon curd. But feel free to get creative and make your own,

The ingredients you need to make these creamy fruit popsicles?
- Plain Greek yogurt
- Fruit preserves (or fruit mixture) and lemon curd
- Full-fat canned coconut milk
- Vanilla extract
Supplies you’ll need
- Small paper cups (I could only find plastic cups so I used those and they worked just fine. I wanted snowcone cups, had but no luck finding them). I’ll order these for next time!

Easy to make creamy fruit popsicles for summer
- Prep Time: 5 minutes
- Total Time: 5 minutes
- Yield: 4-6 1x

Ingredients
- 1 –1/4 cup Greek plain yogurt, divided
- 3/4 cup fruit preserves (I used two parts blueberry preserves and one part lemon curd)
- 6 ounces canned coconut milk
Instructions
- Divide the yogurt into two-three small bowls depending on how many layers you want.
- Add the preserves to one or two bowls and the lemon curd to another, and stir to combine.
- Add 2 ounces of coconut milk to each bowl and stir.
- Spoon some blueberry (or lemon) yogurt into small cups and put it into the freezer for about 15 minutes. Then add the lemon (or the blueberry) and put it back into the freezer for about 15 minutes. Then repeat with the last layer.
- After about 15 minutes, take them out of the freezer, insert a popsicle stick, and return to the freezer until they are completely set.
- Enjoy!
For a Fun Twist, Add a Cookie layer!
For this creamy popsicle, we used lemon curd with yogurt for two of the layers, strawberry jam with yogurt for the middle layer, and then, just for fun, we added a layer of crushed biscoff cookies!
(Note: we did thin out the yogurt with a little coconut milk, you could use any milk, as it’s such a small amount)
