Healthy and Delicious Meyer Lemon Vinaigrette Salad Dressing

Hello! I hope you enjoyed the holiday season—a healthy and delicious Meyer lemon vinaigrette salad dressing recipe to kick off the new year. As much as I love the holidays, I also look forward to settling into the new year, taking it a little slower and making delicious, healthy meals. My sweet friend in LA sent me some Meyer lemons in a Christmas box, and my first thought was Lemon bars! Obviously! But then I thought a fresh Meyer lemon vinaigrette would be so lovely.
Our kids got us The Four Horsemen Cookbook for Christmas. It’s their favorite restaurant in Brooklyn. And it even has a Michelin Star. There are so many recipes I want to try, but I started with this healthy Meyer lemon vinaigrette featured in the cookbook. I hope you like it as much as we do.
Simple ingredients for the Meyer lemon vinaigrette recipe

- Whole Meyer lemons (I’ve seen them at Trader Joe’s)
- Lemon zest
- Fresh Meyer lemon juice
- Dijon mustard
- Champagne vinegar
- Garlic cloves
- Sea salt
- Good quality extra-virgin olive oil
- Sweet baby butter lettuce or your choice of leafy greens
Directions for making this healthy and delicious Meyer lemon vinaigrette salad dressing






- In a small bowl, add the lemon zest, juice, Dijon mustard, champagne vinegar, garlic, and salt, and whisk briskly until combined.
- Slowly pour the olive oil while vigorously whisking until the ingredients have emulsified.
Pour the leftover dressing into an airtight glass container, such as a Mason jar or Weck jar, and store it in the refrigerator for up to one week.

Ingredients
- Zest from 2 Meyer lemons
- 3/4 cup plus 2 tablespoons (from about 6 lemons) of freshly squeezed Meyer lemon juice
- 4 teaspoons Dijon mustard
- 2 tablespoons champagne vinegar
- 1 garlic clove finely grated using a microplane grater
- 2 teaspoons sea salt
- 1 cup good quality extra virgin olive oil
Instructions
- Add the lemon zest, lemon juice, Dijon mustard, champagne vinegar, garlic, and salt in a small bowl, and whisk briskly until combined.
- Slowly pour the olive oil while vigorously whisking until the ingredients have emulsified.
Notes
You will likely have some leftover dressing, depending on how many salads you are serving. You can store the dressing in an airtight container in the refrigerator for up to one week.

When we got married 35 years ago my husband’s youngest sister gave us a Meyer lemon tree. (We are in SF Bay Area.) And that beautiful tree has given us (and the neighborhood) thousands of lemons thru the years! I use them for everything, including cleaning, cooking, limoncello gifts, decorating…best gift we received, really 🙂

For wedding gifts, new home gifts…but obviousy only if you live in places like California or Arizona! So…you’ve lived in the same house for 35 years? That’s wonderful!

I need to try those pods! I never used any of those pods because they were incased in plastic, but these sound like a win win! That dressing is so similar to one that I “wing”. I pinned this so mine will be more consistent! Our lemons finally are picking up here!

Receiving your Holiday card this week was a delight. Glimpses of you and your family exploring Europe speak volumes.
I always snatch up a bag of Meyer lemons as soon as they appear at Costco. Heaped in a vintage blue pottery bowl on the counter cheers me during the grey winter days on our coast. The stasch will be somewhat diminished when 6 of them become vinaigrette tomorrow.
