Mini Apple Cinnamon Cakes + More Sunday Favorites

My Pinterest feed is filled with apple cinnamon bread, cookies, and cake recipes, and then I remembered a cake we made last year. So I took that recipe, added a crumb topping, and made it into two mini loaves. One to keep and one to give to a friend.


Here is what makes this recipe so yummy, IMO. Often, apple recipes call for peeled, chopped apples to be added directly to the batter; however, my Apple Cinnamon Skillet Cake recipe requires cooking the apples for approximately 7-9 minutes before adding them to the batter. The apples with brown sugar soften, and you get this delicious syrupy mixture. Now that’s what you want to add to the batter.
Instead of the brown butter frosting on the cake, I made a crumble topping. Then I used parchment paper sandwich bags, cut them open, and wrapped them around each mini cake, adding some brown and white gingham ribbon.

We have been having the most summer-like weather here in the northeast. I’m so ready to make the switch to fall clothes, but with the ridiculously hot and humid weather we are having, I needed a transition look for a few upcoming events in the city.

I also love the Tom Shirt in burgundy with floral embroidery and the Marzy Shirt, which is the opposite in color from the Tom Shirt. It has burgundy embroidery on ecru.

Hi Jill, sorry for my slow response! I don’t know how I missed this! Anyway, the crubmle I made was just good French butter, equal parts brown sugar and white sugar, plus flour. I melted the butter a little too much which sort of made larger clumps, than crumble…bnut delicious either way!
