It’s Tuesday! Or should I say it’s Tartine Tuesday?

What is it about an open-faced sandwich that’s so appealing? Well, everything! Less bread than a traditional sandwich, for one. And an open-faced sandwich is so pretty! I think that’s why we call them by the French name Tartine. The name is even more attractive in French.

I looked up the definition of tartine to ensure I was using it correctly.

So now that we have that out of the way…

This sandwich, tartine, or whatever you want to call it…, is perfect for breakfast, lunch, or dinner. Would the toppings be considered rich or elaborate? Who’s to say?

Let’s discuss the whole poached egg issue.

I never made poached eggs. And then Brent started making them, and as I watched from a safe distance, I realized that poached eggs are not actually all that difficult. And no special equipment is necessary.

No Special Pan or Molds Necessary to Make Poached Eggs

I used to think, well, if I had one of these pans, I would make poached eggs. But Brent would never let a specific pan get in the way of a poached egg. Keep reading to learn how we make almost perfect poached eggs with no special pan every time.

I am using napkins and glassware from Terrain and very old sterling silver that I recently added to working glasses in my armoire in the dining room. It was almost never used in a silver chest in the basement. When I reorganized our armoire, I decided it was time to bring it out and use it often.

Ingredients for Simple Avocado & Poached Egg Tartine for 2

  • Sourdough bread
  • Eggs
  • Avocado
  • Butter
  • Chives
  • Salt and red pepper flakes

How to Make a Poached Egg Without a Special Pan

  1. Crack the eggs individually into small bowls or ramekins.
  2. Bring a pan of water to an almost boiling point and lower the heat.
  3. Carefully, one at a time, pour each egg into the hot water.
  4. Cook for approximately 4 minutes or until the eggs are white and the yolk is still soft inside.
  5. Carefully remove each egg with a slotted spoon and slide it on top of your toast.

Ingredients

Scale
  • Two slices sourdough or bread of your choice
  • 4 eggs
  • 23 tablespoons butter
  • 1 avocado
  • lemon
  • Chives
  • Red pepper flakes
  • Pinch of salt

Instructions

For The Poached Eggs:

  1. Crack the eggs individually into small bowls or ramekins
  2. Bring a pan of water to an almost boiling point and lower the heat.
  3. Carefully, one at a time, pour each egg into the hot water.
  4. Cook for approximately 4 minutes or until the eggs are white and the yolk is still soft inside
  5. Carefully remove each egg with a slotted spoon and slide it on top of your toast.

Prepare the Toasts:

  1. Butter both sides of the bread and fry in a skillet until golden on both sides
  2. While preparing the bread, cut the avocado in half and slice it, and squeeze some lemon over the avocado to keep it from turning brown while you prepare the rest.
  3. Lay out the toasted, buttered bread and top each slice with the avocado divided.
  4. Lay the eggs right on top of the avocado
  5. Sprinkle with salt, pepper, and red pepper flakes
  6. Add fresh chopped chives 
  7. Serve immediately!
