Smashed Potato Crust Quiche Lorraine

For Sunday favorites with Mary Ann and Cindy, I thought I would share an update to our quiche recipe, which is one of our most popular posts. We love to serve quiche for brunch when the kids come home. It’s one of those versatile dishes that can be served hot or even at room temperature, making it the perfect brunch dish.
Adding a smashed potato crust, especially in winter, just seems extra cozy. You could use any quiche recipe you like, but Ina Garten’s quiche with egg, Gruyère, fresh thyme, and bacon filling is our favorite. It’s a perfect cozy winter brunch, lunch, or even dinner recipe paired with a simple green salad.
Here’s how we made the crust:


We used Baby Yukon Gold potatoes, which are small, thin-skinned, yellow-fleshed potatoes known for their creamy, buttery texture and rich flavor. Perfect for this situation and easy to find.
To prepare the potato crust, place the potatoes in a pot with cold water that covers them by about an inch. Bring to a boil, then add about 1 1/2 tablespoons of salt and reduce the heat to medium. Cook potatoes for about 30 minutes or until fork-tender. Drain and then add to a buttered pie dish. Sprinkle again with generous salt and some fresh ground pepper, then, using the flat bottom of a glass, smash the potatoes into the dish and up the sides like you would a pie crust.
Then add your quiche filling and bake at 400º for 30-35 minutes.

Happy Sunday! I love the quiche idea and will make it for family when they come up, perfect, thank you! And I took advantage of the AYR sale as I was so happy with my Deep End shirt in Odeon a while back I went back for the blue oxford. I really love their shirts. Thanks for the recommendation for Stephanie; all the “creatives” in Los Angeles we know are having a very hard time right now with the industry in flux but I will keep a note. Love the theatre idea!
