- 1 cup rolled oats
- 1/2 cup pumpkin puree
- 1 tablespoon chia seeds
- 3/4 – 1 cup almond milk
- 1 tablespoon maple syrup
- 1 teaspoon pure vanilla
- 1/2 teaspoon pumpkin pie spice
- 1/4 cup almond butter
- pinch of salt
- vanilla yogurt for topping
- Mix everything, adding more milk or oats as needed. Spoon into small jars or glasses. Cover and refrigerate overnight (or at least four hours).
- Top with vanilla yogurt and a little fresh grated nutmeg!
