For the Cinnamon Simple Syrup:
- 1 cup sugar
- 1 cup water
- 4 whole cinnamon sticks
To Prepare the Drink:
- 1 ginger beer
- 1 can of pineapple juice
- 1 heaping teaspoon of minced ginger from a jar (or fresh)
- 10–20 fresh mint leaves, plus more for garnish
- 2–3 limes (reserve one half to cut slices for garnish)
- crushed ice
