For the Cinnamon Simple Syrup:

  • 1 cup sugar
  • 1 cup water
  • 4 whole cinnamon sticks

To Prepare the Drink:

  • 1 ginger beer
  • 1 can of pineapple juice
  • 1 heaping teaspoon of minced ginger from a jar (or fresh)
  • 1020 fresh mint leaves, plus more for garnish
  • 23 limes (reserve one half to cut slices for garnish)
  • crushed ice

Instructions

  1. To make the simple syrup: add the sugar to a small saucepan and add the water and cinnamon sticks. 
  2. Bring to a boil, turn heat low, and simmer for 30 minutes. Remove from the heat, leave the cinnamon sticks and allow the mixture to cool. Remove the cinnamon and pour it into a jar.

Prepare the drink:

  1. In a jar or cocktail shaker, add the mint leaves, juice of 2 limes, and ginger. Muddle it, and then add the pineapple juice and the cinnamon simple syrup.
  2. Shake, add crushed ice to the jar, and shake again for 30 seconds.
  3. Pour into two tall or four short glasses through a strainer. Add more crushed ice to each glass. Top off with ginger beer.
  4. Garnish with lime slices and fresh mint.
