A refreshingly easy, summery Mojito Mocktail Recipe for this weekend, with or without alcohol.

Ingredients

For the cinnamon simple syrup:

  • 1 cup sugar
  • 1 cup water
  • 4 whole cinnamon sticks

For the drink:

  • 1 ginger beer
  • 1 can of pineapple juice
  • 1 heaping teaspoon of minced ginger from a jar (or fresh)
  • 1020 fresh mint leaves, plus more for garnish
  • 23 limes (reserve one half to cut slices for garnish)
  • Crushed ice

Instructions

For the cinnamon simple syrup

  1. Add the sugar, water, and cinnamon sticks to a small saucepan. Bring to a boil, turn the heat to low, and simmer for 30 minutes. 
  2. Remove from the heat, leave the cinnamon sticks and allow the mixture to cool. 
  3. Remove the cinnamon sticks and pour it into a jar.

For the drink

  1. In a jar or cocktail shaker, add the mint leaves, juice of 2 limes, and ginger. 
  2. Muddle it, and then add the pineapple juice and the cinnamon simple syrup and shake. 
  3. Add crushed ice to the jar, and shake again for 30 seconds. 
  4. Pour into two tall or four short glasses through a strainer. 
  5. Add more ice cubes to each glass. 
  6. Top off with ginger beer and garnish with lime slices and a mint sprig.
