Easy and Delicious Popovers Recipe

Popovers are served in a wood bowl with a plate of butter.

  • 1 cup all-purpose flour
  • 1 cup whole milk (warm or lukewarm – I microwave the milk for 30 seconds)
  • 2 large eggs (room temperature)
  • 3 tablespoons melted butter
  • 1 teaspoon salt

Instructions

  1. Preheat the oven to 400 degrees
  2. Use one tablespoon of the melted butter to brush the inside (sides and bottom) of each muffin cup and put the muffin pan in the oven for 5 minutes.
  3. While the muffin tin is in the oven, mix the eggs in the blender. Then add the warm milk and blend again. Add the flour, salt, and 2 tablespoons of melted butter and mix again until completely blended.
  4. Transfer the batter to a bowl or glass measuring cup with a pour spout, and pour the mixture into the warmed muffin tin, and distribute the batter to eight cups.
  5. Put the muffin tin onto the center oven rack and bake for about 35-40 minutes until they are golden brown.

Notes

Note: When the popovers are done baking, remove them from the muffin tin and using a paring knife cut a small slit in the side of each popover. This will release the steam and help keep the crispiness. Also, do not open the oven door while they are baking as this might cause the popovers to deflate or collapse.
