2 ounces smoked bacon, chopped small, and sautéed.
1 yellow onion, sliced very thin, and sauteed in the the same pan that you used for the bacon. You may need to add a little olive oil. Sauté until softened.
2 ounces each of shredded Emmental, Gruyere, and Comté cheese

Preheat oven to 400ºF
Roll out the pizza dough and drizzle a little olive oil, then spread the mustard, followed by a generous layer of creme fraîche.
Sprinkle the bacon, followed by the sautéed onions.
Finally, sprinkle the three cheeses generously on top.
Bake on a pizza stone for 15 minutes or until the crust begins to turn golden.
