4 cups of fresh pecans
1 egg white
1 tablespoon water
1 tablespoon dark brown sugar
1 teaspoon cinnamon
1/4 teaspoon cayenne
1/2 teaspoon salt
Instructions
Preheat the oven to 300 degrees.
In a large bowl, whisk the egg white and water vigorously until frothy.
In a separate bowl, add the brown sugar, cinnamon, salt, and cayenne and mix until well combined.
Line a baking sheet with parchment paper.
Add the pecans to the bowl with the egg whites and toss. Add the sugar mixture and toss again until all the nuts are evenly coated.
Spread the nuts evenly and in a single layer on the parchment paper-lined baking sheet and bake for 40 minutes. Stir the nuts halfway through baking, and rotate the pan.
Remove from the oven and allow the nuts to cool completely before storing in jars.
