Lavender Granola

Granola that’s perfect for spring and summer. Top it on yogurt with some fresh fruit or just with some ice-cold milk.

Ingredients

  • 3 cups rolled oats
  • 1/2 cup pumpkin seeds
  • 1 cup sliced almonds
  • 1/2 cup pecans, chopped
  • 1/4 culinary lavender
  • 46 drops lavender vitality essential oil (optional)
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup melted coconut oil
  • 1/2 cup honey
  • 1 cup golden raisins

Instructions

  1. Preheat oven to 350º and line a large rimmed baking sheet with parchment paper
  2. In a large bowl, combine the oats, pumpkin seeds, nuts, culinary dried lavender and toss to combine
  3. In a 2-cup glass measuring cup, melt the coconut oil
  4. Add the honey and salt to the coconut oil and whisk to combine and add to the dry ingredients. Add the lavender vitality essential oils if using at this time and once everything is combined, pour onto a lined baking sheet.
  5. Bake for about 40 minutes, turning every 15 minutes with a spatula. If you want granola clusters, crowd the granola together on the sheet pan and it will stick together.  This also prevents the granola from burning.
