Chewy Mollasses Cookies

I make these cookies big like we used to get at Dean & DeLuca in the city. I’ve tried many recipes to try and replicate those and this one comes pretty darn close! It’s soft and chewy, just the way the way they a molasses cookies should be…according to me!

Ingredients

  • 1 1/2 cups unsalted butter, softenedย 
  • 1 cup white sugar
  • 1 cup packed dark brown sugar
  • 1/2ย cupย molasses
  • 2 eggs
  • 4 1/2 cups all-purpose flour
  • 4 teaspoons baking soda
  • 1 tablespoon ground ginger
  • ย 2-4 drops ginger vitality essential oil (optionall)
  • 2 teaspoons ground cinnamonย 
  • 35 drops cinnamon bark vitality essential oil (optional)
  • 1 teaspoon ground cloves
  • 24 drops clove vitality essential oil (optional)
  • 1 teaspoon salt

Instructions

  1. In a medium bowl, whisk the flour, baking soda, and spices. Set aside.
  2. In a separate bowl, combine the butter and sugars and cream until light and fluffy. Scrape down the sides as needed with a silicone spatula. ย 
  3. Mix in the eggs, one at a time, then add the molasses and beat on medium-low speed until combined. Graduallyย add in the dry ingredient mixture and mix until it is evenly incorporated.
  4. Transfer the dough to an airtight container and refrigerate for at least an hour, or until the dough is completely chilled.
  5. Preheat oven to 350ยฐF.ย  Line a baking sheet with parchment paper; set aside.
  6. Roll the dough into large balls, about 1.75″ inches in diameter. To make the cookies the same size, I use an ice-cream scoop with a release.ย 
  7. Fill a separate small bowl with sugar, and roll each ball in the sugar until it is completely coated. Place dough balls on the prepared baking sheet.
  8. Bake for about 15 minutes, until the cookies begin to slightly crack on top. Remove from the oven and let cool for a minute, then transfer the cookies to wire racks to cool completely.

Notes

I added vitality drops of essential oil and it boosted the flavors, we loved it, but it’s not necessary if you don;t have them.
