A green cookie just in time for St. Patrick’s Day! I bought the Matcha Powder at Whole Foods and the addition of Peppermint in both the cookie dough and the glaze makes them the perfect Springtime cookie! And you can adjust the mint flavors by adding as much peppermint as you like! 

Ingredients

  • 1/2 cup salted butter at room temperature
  • 2/3 cup sugar sugar
  • 1 egg 
  • 1/2 teaspoon vanilla extract
  • 6 drops Peppermint Vitality Essential Oil or 1/2 teaspoon peppermint extract. Decrease amount if you don’t like it too strong.
  • 4 teaspoons matcha powder
    1/2 cups all-purpose flour

Instructions

  • Using a hand or stand mixer, add the butter and sugar and cream until light and fluffy, about 2-3 minutes.
  • Add in the egg, vanilla, and peppermint vitality essential oil and beat until everything is incorporated.
  • Sift in the matcha powder and flour and mix until combined. 
  • Dump the mixture onto a large piece of parchment paper and form into a disc. Wrap up the disc in parchment paper and refrigerate for 30 minutes.
  • Preheat oven to 350°F.
    Using a rolling pin, roll out the disc to ¼” inch thickness and cut out shapes.
  • Place cookies onto a baking sheet lined with parchment paper. Bake the cookies at 350°F for 10 minutes. Do not overbake.
  • Remove and cool on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely before decorating.
  • Make a glaze and drizzle over the cookies

Notes

For Glaze:

Confectioners sugar, peppermint essential oil, and a little water or milk to make a glaze that you can drizzle over the top.
