Maple Granola

I made this batch of granola using what I had on hand because it’s a snow day! But it’s so good I’ll be making it again next week!

Ingredients

  • 3 cups old-fashioned oats
  • 1/2 cup almonds (chopped)
  • 1/2 cup unsweetened coconut
  • 1 egg white
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 cup maple syrup
  • 1/2 cup olive oil (maybe a little more)

Instructions

  1. Preheat oven to 325º and line a rimmed baking sheet with parchment paper
  2. Mix together all the dry ingredients
  3. Add the olive oil, vanilla extract, maple syrup, and egg white and stir to combine, adding a little more olive oil as needed. 
  4. Spread out on a baking sheet. If you like clumps of granola (and who doesn’t), spread out close together and not too thin, or it will burn.
  5. Bake for 15 minutes, then take out and toss and return the pan to the oven, this time with the back of the pan in front and bake for an additional 10 to 15 minutes, checking often.

Notes

Let cool and enjoy! Serve on yogurt or ice cream as a topping or with ice-cold milk! Place any remainder in an airtight jar and keep for about a week.
