Maple Granola

I made this batch of granola using what I had on hand because it’s a snow day! But it’s so good I’ll be making it again next week!

Ingredients

  • 3 cups old-fashioned oats
  • 1/2 cup pecans (chopped)
  • 1/2 cup unsweetened coconut
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla
  • 1/4 cup olive oil (maybe a little more)

Instructions

  1. Preheat oven to 325º and line a rimmed baking sheet with parchment paper
  2. Mix together all the dry ingredients
  3. Add the almond butter, olive oil, vanilla and maple syrup and toss together, adding a little more olive oil as needed.
  4. Spread out on a baking sheet. if you like clumps of granola (and who doesn’t), spread out close together and not too thin or it will burn.
  5. Bake for 12 minutes, then take out and toss and return the pan to the oven, this time with the back of the pan in front and bake for an additional 10 minutes, checking often.

Notes

Let cool and enjoy! Serve on yogurt or ice cream as a topping or with ice-cold milk! Place any remainder in an airtight jar and keep for about a week.
