How often do you cook or grill salmon, have leftovers, and don’t know what to do with it? You’re not alone, it used to happen to us until we discovered this delicious tartine.

Ingredients

Scale
  • Cooked salmon (I estimated we had between 1/3 and 1/2 lb.)
  • 1 Package of cream cheese
  • 1 English cucumber
  • 3 tablespoons of mayonnaise (for salmon mousse)
  • Sriracha sauce according to your taste
  • Salt and pepper to taste
  • Slices of your choice of bread (we use loaves of either French country or Italian)
  • Toasted sesame seeds (I prefer to use black sesame seeds)
  • Butter for bread

Instructions

  1. Thinly slice the cucumbers and add a little bit of salt and pepper
  2. Butter one side of the bread slices
  3. Toast the sliced bread until it has a nice golden brown crisp
  4. Spread a thin layer of cream cheese on the toast
  5. Spread the salmon mousse on top of the cream cheese
  6. Top with seasoned cucumbers
  7. Drizzle a small amount of the mayo/sriracha sauce combo on top of the cucumbers
  8. Sprinkle sesame seeds on top and serve immediately
