Easy Make-ahead Chocolate Budino

This is the perfect simple dessert that you can make ahead! It’s perfect for Mother’s Day or any other spcecial occasion, especially if you make your own dessert or have little helpers. It’s so easy and pretty too with the dark chocolate “dirt” and an edible flower! 

Ingredients

Scale

3 egg yolks

2 1/2 tablespoons granulated sugar

A pinch of salt

8 oz Semi-sweet chocolate, chopped

1/4 teaspoon rose water (optional)

1  teaspoon butter

1 cup heavy cream

edible flowers (like Johnny Jump Ups)

1/4 package Nabisco chocolate wafers (crushed)

Instructions

  1. In the bottom of a medium-sized saucepan, whisk egg yolks with the sugar until fully combined. Slow drizzle in the heavy cream, whisking the whole time. Warm mixture over medium-low heat, stirring frequently until it is thick enough that it coats a spoon. (Don’t let it simmer or boil.) 
  2. Place the chopped chocolate in the bottom of a bowl and set a fine-mesh strainer over it. Pour the egg yolk mixture through a strainer, onto the chocolate. Remove the strainer and stir; the heat of the egg yolk mixture should melt the chocolate. Add the rosewater if using, Mix until butter is melted and combined. Divide between five small cups and chill until fully cold and set. 
  3. Sprinkle the crushed chocolate cookies on top and add a sprig of fresh mint or an edible flower!

Notes

This recipe makes four small servings. I used 2.5-ounce cups.
