Chocolate Baked Donuts with Johnny Jump Up on the icing

Ingredients

Scale
  • 2 large eggs 
  • 1/2 cup maple syrup
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder 
  • 1 teaspoon instant coffee powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup mini chocolate chips
  • 2 tablespoons butter, melted

For the Glaze

  • 1 cup chocolate chips
  • 1/3 cup whole milk

Instructions

1. Preheat the oven to 350° and grease two doughnut pans

2. In a large bowl, whisk the eggs, maple syrup, milk, vanilla and vinegar. Add the dry ingredients and mix to combine. 

3.  Stir in the chocolate chips and the melted butter and mix just until combined. 

4. Fill the doughnut pan molds about 1/2 way and bake for 12-13 minutes. Remove to a cooling rack and glaze once cooled.

5. Make the glaze stove top or in the microwave. I used a combination. Dip each doughnut into the glaze and return to the cooling rack.

6. Add a Johnny Jump Up!
