Maple Granola

Ingredients

  • 3 cups rolled oats
  • 1 cup hulled pumpkin seeds
  • 1/2 to 4/4 cup shredded coconut
  • 1/2 cup pure maple syrup
  • 1/4 cup flax seeds
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup coconut oil, melted
  • 1/2 cup golden raisins

Instructions

  1. Preheat oven to 325º
  2. Prepare a baking sheet with parchment paper
  3. Mix everything in a large bowl, except the golden raisins
  4. Spread onto a baking sheet
  5. Bake for 30 minutes, turning the pan once halfway through to prevent edges from burning.
  6. Remove and add golden raisins. Using a flat spatula, mix in the raisins and return to the oven for 10 minutes. Add a drizzle of maple syrup.
  7. Allow to cool on the baking sheet so you get clusters (we all want clusters)!
  8. Once completely cool, add to a jar.
