Simple Five Ingredient Brie and Crispy Prosciutto Appetizer

  • Creamy brie cheese cut into small cubes (I like to use triple cream brie cheese)
  • 1 package of prosciutto
  • A few sprigs of fresh thyme
  • 1 teaspoon of fig preserves per phyllo cup  (You can use any sweet or savory jam that you like. I personally like the Dalmatia brand of preserves and have used both fig spread and super berry spread. You could even use cranberry sauce.)
  • Phyllo puff pastry shells (1 -2 packages depending on how many you are making)

Instructions

  1. Freeze the brie cheese for about 15 minutes. This will make it easier to cut into small cubes.
  2. Preheat oven to 400 degrees and line a baking sheet with parchment paper.
  3. Make small mounds with a slice of prosciutto and bake for about 10 minutes or until you have crispy prosciutto. Then remove it from the oven, let it cool, and chop it into small pieces. Transfer to a bowl and mix in the fresh thyme.
  4. Reduce oven temperature to 325 degrees and cut the frozen brie into small cubes.
  5. Line a baking sheet with parchment paper and place the phyllo shells in rows – vertically and horizontally.
  6. Place approximately 1 teaspoon of fig jam (or your favorite preserve) in the bottom of each pastry shell, top that with a brie cheese cube, and bake in the oven for about 5 minutes or until the cheese melts.
  7. Remove from the oven and sprinkle the prosciutto and thyme mixture on top and you’re ready to serve!
