Puff Pastry Apple Roses with Brown Butter, Sugar, and Cinnamon

  • 1 sheet of puff pastry dough
  • 3 apples (I like to use honey crisp apples but gala, fuji, or any other apple would work too)
  • 1/3 cup granulated sugar
  • Light brown sugar (1 tablespoon in the bottom of each cocotte)
  • 1 stick of butter
  • 1 to 2 teaspoons of cinnamon (depending on how intense you like the flavor)
  • Powder sugar (for topping)
  • 1 egg (beaten with 1 tablespoon of water)
  • Cooking spray

Instructions

  1. Preheat the oven to 400 degrees.
  2. Generously coat each cocotte with cooking spray or butter them if you prefer.
  3. Add the butter to a small pot and slowly brown the butter swirling or stirring in the pan frequently. This should take about 7 minutes. Set aside.
  4. Cut the apples into thin slices.
  5. On the stove, add the apples, cinnamon, and sugar to a pot and cook slowly until the sugar has melted, juices from the apple flow, and the apples are softened. Don’t over-cook the apples as they will become mushy.
  6. Remove puff pastry dough from the freezer and let thaw for a few minutes. On a kitchen counter, place a puff pastry sheet on a lightly floured surface and roll it out in a sqaure about 1/8 inch thick, 12 x 12 inches. 
  7. Using a pizza cutter, cut 3-inch wide puff pastry strips.
  8. Brush each strip of dough generously with the brown butter and sprinkle it with a layer of cinnamon sugar.
  9. Layer the softened apples on half of the pastry strips making sure the rounded part of the apple slices sit slightly above the pastry strip. Use approximately three layers of apple slices (depending on how thinly you sliced them).
  10. Fold the bottom half of the pastry strips over the apples and brush with egg wash.
  11. Starting at one end, roll the pastry strips and apples to form a rose and carefully transfer it to the cocotte or muffin tin.
  12. Place the puff pastry roses on a baking sheet and transfer it to the oven.
  13. Cook for 40 to 45 minutes or until the dough is done.
  14. Remove from the oven, let cool for a few minutes, sprinkle with powdered sugar, and serve.
