Mini Ginger Cookies

Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup dark brown sugar
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground clove
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 sticks or 12 tablespoons unsalted butter
  • 3/4 cup dark molasses
  • 1 large egg yolk
  • 1 teaspoon vanilla
  • Cinnamon sugar (for rolling the dough balls in before baking)

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl, sift the flour and then whisk together the flour, baking soda, salt, cinnamon, ginger, clove, and nutmeg until combined. 
  3. In the bowl of a stand mixer, add the butter and dark brown sugar and mix on medium speed until it’s creamy and combined (about 3 minutes).
  4. Add the egg yolk, molasses, and vanilla, and continue to beat until combined.
  5. Add the flour mixture, one half at a time, to the bowl and mix on medium speed until a sticky dough has formed.
  6. Remove the dough from the stand mixer, shape it into a disk, wrap it in plastic wrap, and chill for about an hour.
  7. Take a small piece of dough and roll it between your hands to form a ball about the size of a marble. 
  8. Roll the marble-sized piece of dough in a bowl of cinnamon sugar to coat and place it on a parchment paper-lined baking sheet. You may want to enlist some help as it does take some time make the marble-sized balls of dough.
  9. Place the baking sheet in the oven and bake for 6 minutes.
  10. Remove from the oven and immediately transfer the cookies to a wire rack for cooling.
